We had a great visit with our friends. They are such a nice couple, and we've become close over the years. It was good to see how they have been these past few months, and they were blessed to see how we are. They live up in the mountains, farther up than we were at. They have some land that they farm, and they have farm animals and they know of fishing holes up there. We've always loved visiting at their house, the kids have such a good time. They have offered us their little cabin they have for a mini-vacation this summer. It will be great. We could ride the horses and the 4 wheeler, go fishing and just have fun up in the mountains. We are so excited about this. We love visiting up in the mountains and the farm, and being around that kind of lifestyle. It's a great place to visit. So sometime this summer we'll be going up there for the weekend. Maybe around 4th of July, so Paul would have an extra day off. It will only cost us the gas to go up there. It's about 2 hours away. I'll let you know when we have an exact date all settled.
So I was chatting with a friend yesterday before our friends came over, and we started talking about salsa. I have never made salsa before, though Paul really enjoys a good salsa. He likes more mellow kinds, not hot and spicy. As my friend and I are talking I tell her the few things I have around the house in the pantry. She is so great at coming up with 'throw together' recipes. So I give a try at throwing together salsa. I had canned diced tomatoes in the pantry, chopped up an onion, put in garlic, parsley, basil and some lemon juice. Then mixed some chili powder and crushed red pepper with some water and added that for a 'spicy' effect. It turned out great. I was surprised how much Paul liked it. He liked it so much that he finished it off this morning and I had to make some more today. It always feels good to make something that Paul enjoys so much. I have some pictures to share of me making it too.
Here's a quick funny though. As I'm chatting with my friend she asks if I have anything 'green' to put in it for some color, parsley or something. I said yes, dried parsley, then I remember that I had freeze dried chives in the fridge. Perfect. So I make up the salsa, everyone enjoys it. Today I go to make more salsa and I realize that the freeze dried 'chives' was actually freeze dried 'basil'. I double check with Paul that he likes it, and he says yes. So I tell him about the mix up, and he says, "Well whatever you did, keep doing it. It tastes great." I will get chives sometime and try it with that. But I made more with the basil, and it turned out great. OK, on to the pictures.

What a beautiful smile, my friend! I love homemade salsa, I can't wait until we have tomatoes again this year. It's so much fun to have friends to chat and help us the way your friend helped you. Hummm, I will have to try Basil next time, that sounds wonderful.

My sister loves making homemade salsa. She makes it just spicy enough that our best friend puts it on his wife's meatloaf. Says it finally gives it flavor. We don't tell her that though LOL.
Glad to hear you are all doing well. We are all on the recovery trail and happy to seen the snow go bye-bye.
I love salsa! I have never made it so maybe I'll have to give it a shot. Wonder how much $$ I'd save seeing as I usually buy it (always on that grocery list) and have it in the fridge or pantry.
