I have seen these called lapbooks or flapbooks. My children prefer flapbooks because they have so many flaps!
We did our first on about Passover. I am sure we made mistakes, but we still learned a lot!
First, each child chose a folder color and we folded them and decorated the covers:

Then, we cut down the center so the flaps can open. This one is Kaitlyn's report.
Then, each day we would do a mini-project and add it to our folders. The older children did their own writing and the littler ones traced what I penciled in for them.

1.) The yellow book on the top left is a mini book about the life of Moses.
2.) on the bottom left is a cup cut out. The top is not glued down and functions as a pocket to hold cards describing the four cups used in the Passover Seder.
3.) What you see in the middle is an extra flap that was taped onto the top edge of the center to give us extra room. These are photos from OUR seder in April. I made wallet size copies for them to use.
4.) On the right side are strips of red paper numbered 1-10. Under each flap is a picture depicting one of the Plagues.

1.)Moses mini-book... pictures and narration. 2.) Names of cups are on the front of the cards (that look like Matzah crackers... I scanned actually Matzah crackers on our scanner and printed it out in color on card stock and then cut to the right size to fit into the cup pocket.) The back side of the cards have a description of each Cup's meaning/significance.

3.) Photo flap... some of the children put more photos on the back and some of them wrote a description of our Seder on the back of the flap.
4.) The 10 Plagues are depicted under these 10 flaps. The children wrote the numbers and I printed out mini graphic from a book I have about Biblical Feasts. They could have drawn their own too. But since I HAD these... I figured we would use them!
UNDER THE FLAP:

5.) This is a wheel. The bottom is just a circle. The top is another circle with a wedge cut out (my children called it Pac-Man! LOL). The top circle (blue) has a Label that says Seder Plate and a brad holding the two circles together. It goes all the way through the report folder and can be seen on the back. The green circle has six sections and each section has a picture and a description of the meaning of each element on the seder plate. I also got these graphics from the Biblical Feast book, but again, they could have drawn them.
There is also a label below the Seder Wheel... (you can kind of see it in the above photo where the flap with the pictures is being lifted up. It says, " This special plate is called the Seder plate. Each of the foods symbolizes part of the Passover story. This story is not only a story of physical deliverance from bondage; it is also a story of our spiritual deliverance." (This is also from the book on Biblical Feasts).
So... There it is... our FIRST lapbook/flapbook.
Now we are working on one about BEES! (Free download at http://www.handsofachild.org )
Our next one will be a summary of the book of Genesis. I think we will do a DOUBLE FOLDER for THAT one!
This is fun!
