Well, I saw your comment and thought I would just go ahead and answer it now, before I forgot about it. :)
I haven't tried using the coconut oil in the tortillas, but that would be something to try. You could try it and see how it works. If we didn't have shortening, I would use canola oil in them.
I am sure they would taste fine, and be a lot better than just using organic shortening in them. :) Let me know how it goes with them, k?
Oh and to Kait who wrote this post - that was sweet of you, but maybe you should post another post on your blog... it seems to be neglected as your momma's! LOL just kidding. :)
