Cooking Guatemalan Style

On Sunday we asked Schylar's mentor, Mr. Brewer and his wife, to come and share a Guatemalan dish with us as a thank you for all the support they gave to him prior and after his trip. The girls and I went to go get the ingredients for pipian but alas, I have NO idea what it was supposed to look or taste like so when I printed off a recipe on line it had some strange ingredients listed and we spent hours scouring the shops for them. I had to give up on 2 after I couldn't find them...We tried making homemade tortillas and they were so-so - it's an art for sure. It was fun as a group exercise as everyone made their own. We tried friend plantain for dessert as well and it was only made tolerable by the ice cream :) So..I'm thinking a class in how to cook that style of food is in order if we are ever to do it again. The pipian came out good and everyone loved it but I'm sure it was very different than they eat there. Today Ed is off to teach 8th grade English and I'm off to teach Grade 6, 4 and K...all together...at least I have a cranking wood stove (It's back in the 20's this morning!) and lots of java....ps - my new birthday present from Dad are fabulous! The knives are so sharp I'm not sure I should be allowed to use them!!
