Aug. 7, 2006 - Time for a recipe!

Here's one of our favorites.  It's delicious, quick and easy to make.  And it's one that the kids are always delighted about (which makes it a keeper!)

 

Honey Baked Chicken

Preheat oven to 350 degrees

 

Arrange in a shallow baking pan:

   4-6 boneless, skinless chicken breasts, cut in halves

 

Combine and pour over:

   1/3 cup margarine or butter, melted

   1/3 cup honey

   2 T prepared mustard

   1 tsp salt

   1 tsp curry powder

 

Bake for 1 hour, or until chicken is done, basting a few times.

Serve over rice.

 

That's it!

but we cut the chicken into smaller chunks and have it over rice. At least I think it's the same thing.

Actually I don't know... Amy always makes it. But if it's the same thing, it's really good. I always want leftovers for lunch, but there is never enough.

... I'm pretty sure Amy has the recipe. And thanks for mentioning the serve-with-rice thing. I kinda forgot that part in my original post. That's what I get for posting at 7:30 in the morning! :)

My dearest, everything you make is just delicious. You're just a great cook. If it wasn't for your wonderful cooking for the past nine years, I may be tiring of mac-n-cheese. THANK YOU for blessing me with so many good meals. You take such good care of us.

Also... didn't you ask what others' favorite meals are? How come nobody has posted them for you?

Pizza, spaghetti. You'll have to ask Rebecca for the pizza recipe; spaghetti sauce is something like this:

Brown 1/2 lb of italian sausage (crumbled) in olive oil (~1/2 cup) in large pot.
Add about...um...2 qts tomato sauce and 2 qts crushed tomatoes (canned, or make your own). Or more or less.
Add:
1 cup chopped onion
2 or 3 crushed garlic cloves
2-3 Tbsp dried basil

Cook on very low heat, covered, for at least an hour. Longer if you have time. Stir occasionally. Serve on noodles.
