Cross Rhodes Academy - Homeschool Blogger

Through our homeschooling journey I wish to encourage and share resources as well as wisdom that would be of help to the homeschooling community.
By bringing our academy to the public, we hope to gather more insight and information from other homeschool families, who have already walked the path that we are now on. I welcome your ideas and suggests that will help us as we educate our son more about God and His calling on his life.

Texas

This week in our study of South Central states is Texas. The capital of Texas is Austin. Did you know that its captial was named after Stephen F. Austin? He led a group of Americans that settled in Texas. We found out that Texas is famous for many great dishes because of it's diverse food heritage. Here's a great one to try...

Texas Sheet Cake

Ingredients:

For the Cake

1/4 c. Cocoa

1 t Baking soda

1 t Cinnamon

1/2 c. Butter (1 stick), melted

Directions:

Preheat oven to 400°F. Grease and flour a 9 x 13 x 2-inch baking pan. Sift together the sugar, flour, cocoa, baking soda and cinnamon, and set aside.

Stir together the remaining ingredients. Mix the wet ingredients with the dry ingredients, stirring until smooth. The batter will be rather thin. Pour

into your prepared pan, and bake at 400°F for 20 minutes, or until a toothpick comes out clean. While the cake is baking, prepare the frosting.

For the Frosting

1/4 c. Plus 2 tablespoons Milk (whole, 2%, skim - doesn't matter)

1/4 c. Cocoa

1/2 c. Butter

1 pound Confectioner's sugar, sifted (about 4 cups)

1 t Vanilla extract

1 c. Chopped pecans

Directions:

Mix the milk and cocoa in a heavy saucepan (stir, stir, stir). Add the butter and, over medium heat, stir until the butter melts. Remove from heat and

gradually stir in the sugar and vanilla until smooth. Add the pecans. When the cake is just out of the oven, spread the frosting evenly over the hot

cake. If you aren't sure about your oven, you can test it with one of those little dime store oven thermometers.

Note: With its comparatively thin batter, Texas Sheet Cake requires every bit of the 400° heat in your oven, if it's going to get done in 20 minutes.

If you are from Texas feel free to share a recipe with us to try. This is the last of the South Central states. I won't be back until after the holidays to share with you about our state studies. We are taking a break away from the states until then. Thank you for stopping by to learn along with us.

Louisiana

This week in our study of South Central states is Louisiana. The capital of Louisiana is Baton Rouge. Did you know that in 1803 the French sold the entire Louisiana Territory to the U.S. for fifteen million dollars? It was called the "Louisiana Purchase". Early in Louisiana there was a blending of foods from Spanish, English, and French foods. We know them today as the Cajun (creole) cuisine. Here's a recipe we tried:

Louisiana Dirty Rice

Mix thoroughly and serve. I also added some paprika to bring the color to the dirty rice.

I would have had a picture of this to show you but I didn't remember it until we had eaten it up. Sorry...It's been a busy week and I've had lots of things keeping me busy. If you are from Louisiana feel free to share a recipe with us to try.
I got another Award!!!

I have been blessed again with an award. This "Gorgeous Blog Award" came from Bronwyn over at Coffeandconversatio. Thank you Bronwyn. I hope you stop on over there and check out her blog. She has a really nice one where she shares her life as a mother and wife. By accepting this award I am require to tell you six things about myself that you don't know and then award it to six other gorgeous bloggers.

Now let's see what I can come up with that will make this most interesting for you to know about me.

1. I have 2 middle names which are Louqueta Lynn (in this order). Now imagine me being required to write out my whole name as a signature with my maiden and married name hyphenated .

2. I met my dh in college. He wanted to date me for over a year but I wouldn't go out with him because I wasn't interested. He tutored me and we became good friends. I fell for him and we dated for 4 months before we got married. We've been married 13.5 years now. Who would have known ?

3. I only have one child and his birthday is coming up this week (Oct. 22nd). He will be 10 years old. My dh always jokes that God may use His sense of humor to bless us with another child after we're 40 and not thinking about raising kids any longer.

4. I am a black, shy, stay at home, 1st generation, homeschooling moma who just started blogging for the first time last Fall.

5. My favorite movie to watch EVERY YEAR around the holidays is "The Sound of Music".

6. My comfort foods are ice cream, peanut M&M's, and potatoes. I haven't had these in a while because I'm trying to have some discipline. Oh how I miss them since I'm eating healthier now. Please pray for me .
