Calzones

Calzones have been a big hit here.  I use our recipe for Whole Wheat Pizza crust and double or quadruple it.  Each "pizza" makes 8 calzones.  They are slightly bigger than hot pockets.  We put in pepperoni, cheese, and a little sauce and seal them up.  Put them on a cornmeal dusted baking sheet, bake for 10-12 minutes, cool and freeze.  Then they can go from freezer to microwave to table if needed.

 

Here is our crust recipe, I need to say, we grind our own flour and store bought Whole Wheat flour may need some all purpose flour mixed in. 

 

 

WW Pizza Crust

3/4 Tbl. Yeast

1 Cup warm water

 Mix and let sit for 5 minutes.

 

Add:  1 Tbl. Honey

         1 Tbl. Oil

         1/4 Tbl. Salt

         1 Cup Hard Whole Wheat Flour

Mix well.  Add in about 2 more cups of WW flour, to make a strong, good feeling dough.  Shape into a ball and let rise for 1 hour.  Preheat oven to 400.  Roll and shape crust, bake (without topping) for 5 minutes.  Then add sauce, cheese and toppings and bake another 8 minutes.
