Chocolate Mayonaise Cake
2 cups flour
1 cup sugar
1 cup mayonaise
1 cup water
2 tsp. baking soda
4 Tbsp. cocoa powder
1 tsp. vanilla
Mix all ingredients in a bowl.
Pour batter into a 9x13 greased & floured pan.
Bake for 20-30 minutes at 350 degrees.
Cool and then frost with whatever kind of frosting you like but quite frankly Mocha Frosting is best!
Mocha Frosting
4 cups powdered sugar
3 Tbsp. cocoa powder
1 tsp. instant coffee
1/2 cup butter or margarine
1/4 cup water
1 tsp. vanilla
Combine all ingredients in mixing bowl.
Beat until smooth and creamy, 2 - 4 minutes, on medium speed.
Makes enough to frost tops and sides of two 8 or 9-inch layers.
Oh YUM!
