| Sounds yummy! But you should try my MIL's corn bread made with buttermilk. Hers is cripsy outside (she heats her iron cast pan first and soft and fragrant inside). Mine never turns out her way as I have to skip the eggs (son's allergy) and I use a pyrex dish (shame!). I've not tried the masa flour - I'm not sure what that is! Need to read up and experiment. I make mine with half whole wheat and half home-ground corn kernels. Man, once you grind your own meal, you don't ever want to get those store-bought ones again! Also my dh loves crumbling his cornbread in a tall glass and then pouring buttermilk over it. A childhodd delight. I don't know how he can stomach that. Have a great day. | I just love finding a long lost recipe!
My favorite cornbread is the cheap Jiffy kind. Seriously! I've made it from scratch, from frozen and from every mix you can think of. I learned from AmyBeth (mysmokymtnhomeschool) when I visited TN way back when, that the key to a deliciously crisp bottom on your cornbread is to heat your pan FIRST with a bit of shortening in it. Melt the shortening, then pour the batter into the very hot pan, bake in the oven according to directions. YUMMY! |

| I'm going to give that a try sometime, although all of my family likes cornbread. I almost always serve it with pink eye/ purple hull peas, if I have some. My husband loves them. He crumbles up his cornbread, then spoons the peas, with a ton of the juice over the bread. Yuck. But that's one of his favorites. Marissa "inherited" the taste for it.
One time I accidently left the video camera running while I went to a public restroom. Lovely sound effects, as it sat at my feet! Fortunately, I discovered it immediately, and was able to rewind the tape and tape over it! Whew. Letitia |

| What a great idea! I have a small sack of Masa flour in my cupboard that I use to make tamales (yeah, the one time I did it). I don't know what to do with it now. Cornbread is a great idea.
BTW, tamales are so much work! My Mexican friend had a tamale-making party for a couple of us, and it takes all morning. However, my boys still ask, "When can we have tamales?" They are SO good. |

| Thanks a ton for the idea! I love cornbread, but I can't wait to try it out this way! When I was a kid our family would have cornbread as a treat after dinner. We would crumble it in a bowl and put syrup over it. YUMMY, makes my mouth water just thinking about it. |

| Amanda and I were sitting here reading your post, agreeing that we do not like corn bread, either.
I was happy to read about the flour! I don't mind eating it with beans or something that makes it "wet", but we don't really care for the lack of flavor either. My friend makes it with real corn in it and I have made it with green chiles and cheese, too. We liked that. I will have to try out your recipe and see if we like it. I haven't made it with cheese and chiles in awhile, so I think I will do that next time and try it with flour. Have a lovely week! Blessings! -J |
