I have something to confess. Thanksgiving dinner is okay. What I really like is what I can make after Thanksgiving with the leftovers. We actually make these year round using chicken instead of turkey, but this time of year the turkey makes it special. Here are two recipe's that my family loves.
Turkey Pot Pie
1 Small Onion
1 Tbsp. Garlic
1 Stick Butter
5 Tbsp. Flour
2 Chicken Bouillon Cubes
3/4 tsp. Pepper
1/2 tsp. Oregano
1/2 tsp. Basil
1/2 tsp. Thyme
2 Cups Milk
3/4 Cup Water
3 Cups Cooked Cubed/Shredded Turkey
2 Cups Vegetables (1 small bag of frozen mixed veggies or throw in what you have.
1 Cup Shredded Cheddar Cheese
Stuffing (1 box stuffing mix or leftovers from Turkey day)
Preheat oven to 400 degrees. Saute onion and garlic in butter. Blend in flour until smooth. Add bouillon cubes, pepper, oregano, basil and thyme. Add milk and water. Cook and stir until thick and bubbly. Adde cheese, chicken and vegetables. Cook until hot. Pour into baking dish. Top with stuffing. Bake in oven 10-12 minutes.
You can serve this over rice or if you want top with uncooked refrigerator bisquits instead of stuffing.
Mexican Turkey Casserole
1 Can (10 3/4 oz.) Cream of Chicken Soup
3/4 Cup Salsa
3/4 Cup Sour Cream
1 Tbsp. Chili Powder
1 Tbsp. Cumin
3 Cups Cubed/Shredded Turkey
12 Corn or Flour Tortillas, cut into 1" pieces
1 Cup Shredded Cheddar Cheese
Mix soup, salsa, sour cream, chili powder, cumin, and turkey in large bowl.
In 9x13 baking dish arrange half of the tortilla pieces. Top with half of the turkey mixture. Repeat layers. Sprinkle with cheese.
Bake at 350 degrees for 40 mins or until hot.
Serve with additional salsa and sour cream.
