Oatmeal Raisin Muffins - Using the 2-Stage Process!
I have recently been doing some research on the advantages of using a 2-Stage Process when preparing flours, rice, beans, etc. It has been fun to implement some of these things into my meal planning. I wanted to share a recipe I put together for some yummy muffins using the 2-Stage Process! Enjoy!
OATMEAL RAISIN MUFFINS
THE NIGHT BEFORE:
Mix the following ingredients in a plastic bowl, cover with a dishtowel, and soak overnight:
2 cups oats
2 cups whole wheat flour
1/2 cup coconut oil
2/3 cup honey
2 teaspoons sea salt
1 1/2 teaspoons cinnamon
1 1/2 cups buttermilk (you can substitute by mixing 1 1/2 cups milk with 1 Tablespoon lemon juice and let sit for a bit...then use as buttermilk in the recipe)
IN THE MORNING:
Add the following ingredients to the mixture that has soaked overnight and mix well:
2 eggs
2 cups raisins
2 Tablespoons aluminum-free baking powder
1/2 cup applesauce
Scoop into 24 muffin cups and bake at 400 degrees for 18-20 minutes.
Note: This recipe will make enough for us to have two breakfasts! We freeze the leftovers and we have them the following week on our day to have muffins for breakfast. |
