Pumpkin Chocolate Chip Muffins
Pumpkin Chocolate Chip Muffins
3 cups flour (I use whole wheat)
2 tsp. baking soda
2 tsp. baking powder
1 tsp cinnamon
1 tsp. salt
4 eggs
1 cup honey (or 2 cups sugar)
1 15-oz. can pumpkin
1 cup butter
1/2 cup applesauce
2 cups chocolate chips
In a medium sized bowl, mix the flour, baking soda, baking powder, cinnamon and salt. In a separate bowl mix eggs, honey, pumpkin, butter (melted), and applesauce. Combine wet and dry ingredients. When well mixed, add chocolate chips. Put in 24 greased muffin tins. Bake at 400 degrees for 15-20 minutes.
Makes 24 large muffins.

Note: If you have never tried those rubber baking pans, you need to try them! I have 2 muffin pans (holds 24 muffins) that I use for my muffins. I don't have to grease the pans or anything and the muffins cook up so nice! When they are done, you just flip the pans over, push on the bottoms of the cups a bit, and the muffins pop right out. |
