Microwave Bread & Butter Pickles!
Over the past few days I have had some
neighbors give me some cucumbers. Our family doesn't eat raw
cucumbers much, and I had contemplated on making dill pickles.
But, I needed to have more cucumbers to make a batch. Then....I
found this recipe! It makes just enough pickles to fit in a quart
jar! It was perfect! They are really quick to put together,
too. I made a batch last night and put them in the
refrigerator. I tried one this morning (not recommended on an
empty stomach!) and they were so good!
Here is the recipe:
Microwave Bread & Butter Pickles
1/2 tsp. salt
1/4 tsp. tumeric
1/4 tsp. mustard seed
1/4 tsp. celery seed
1/2 c. vinegar
1 c. sugar
2 large cucumbers, thinly sliced
1 to 2 onions, thinly sliced (we don't do onions much, so I only used about 1/2 an onion)
Mix cucumbers and onions in a microwave bowl. Combine vinegar and
spices, and add to the cucumbers and onions. Microwave on high 5
minutes. Stir. Cook on high 5 more minutes. Store in
glass jar in refrigerator. Enjoy!
