This morning I finally woke up feeling sick for the first time this season... it had been coming on for about 2 days, and this morning I woke up with a sore, swollen throat and no voice... a step down from the frog voice I had for the past 2 days.  I had been attempting to let my body fight off whatever this was, but it seemed that I had not been able to do so...

So... I decided my plan of attack:  I used my Cold Formula tincture Tincture recipe  and an Oregon Grape Root tincture.  I took both of these every 3 hours thru out the day and by lunch the sore throat was gone and by dinner I felt pretty good.  I also drank a couple of liters of water, and continued by current supplements, got skin brushing and exercise.  I didn't do a hard work out, but I did do T-Tapp basic workout plus this am mainly for lymphatic stimulation... ditto on the skin brushing... I really wanted to stimulate my body to not hold onto the sickness, but to eliminate it.

This afternoon I did 30 minutes of gentle elliptical... I also got in 100 crunches, but just barely... I was still sore from Monday's 80 that I did.  BTW I used to do 400 daily so this is pretty puny of me, and it's not as hard as it sounds...

Now my take on sickness is that if you are really just feeling bad, but not to the point of really being sick, you should try to do things to make yourself feel good... So I was pretty productive today...  If nothing else I did laundry and got it all put away.

We had stir fry for lunch, and the new sprouts made a nice addition.  It's hard to believe that the 2 tablespoons of beans are now about 1/2 cup of sprouts...

I also baked a pound cake... this is my most favorite cake recipe even though I used crappy coconut instead of the good stuff...  this is also one of those recipes that really translates well to whole wheat...

Cuban Coconut Poundcake

8 oz butter

1 teaspoon vanilla

1/2 teaspoon almond extract

1/2 tsp salt

2 cups sucanat with honey

5 eggs

3 cups flour (I used freshly ground soft white wheat, but regular flour also works)

1 cup buttermilk

7 oz shredded coconut (I prefer the natural brands, but didn't have any today)

1 cup sliced almonds

Preheat oven to 325 degrees... You can use a tube pan, but I just used my regular loaf pans as I wanted a couple of loaves... Grease and lightly flour the pan...

In large bowl cream butter until soft and smooth.  Add vanilla and almond extracts, salt, and sugar: beat to mix...

Add eggs one at a time beating to fully incorporate each one...

Alternately add the flour in 3 additions with the buttermilk in 2 additions.

Fold in the coconut and almonds by hand.

Turn into prepared pan/pans and smooth the tops.

Bake for 90 minutes for a tube pan... you will need to use shorter times for 2 smaller loaf pans (mine cooked for 80 minutes today). 

Let cool for 15 minutes then turn out to cool...
