Thursday night (and I know Thursday is over, this was just really good!): Angel Hair pasta with shrimp and feta cheese, side salad and garlic bread
Recipe:
2 tsp olive oil
1/4 cup white wine
1/2 tsp oregano
2 oz feta cheese
8 oz cooked angel hair pasta
3 cloves garlic, minced
2 tbsp lemon juice
1 pound shrimp, large, peeled and deveined
28 oz can of stewed tomatoes, petite diced, drained.
Directions:
Heat olive oil in large skillet, add garlic and cook for 3 minutes until soft.
Add wine, lemon juice, tomatoes, oregano and shrimp. COver and simmer until shrimp are cooked about 5 minutes
Remove from heat and stir in feta.
Serve over cooked pasta...

Sunday: Baked Parmesan Chicken, Cous cous and broccoli with cheese.

Tuesday: Hillbilly Goulash
Wednesday: Souffle and salad
