Fudgy Brownies

The best brownies ever!!

 

  • 1 cup butter
  • 4 ounces unsweetened chocolate
  • 2 cups sugar
  • 4 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cups chopped pecans, optional
  • Confectioners' sugar

 

  • Melt butter and chocolate together; stir until smooth. In a large bowl, beat sugar and eggs. Stir in vanilla and chocolate mixture. Combine flour and salt; gradually add to chocolate mixture. Stir in pecans if desired.
  • Spread into a greased 9" X 13" baking pan.  Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Dust with confectioners' sugar if desired. Cut into bars. Yield: about 24 brownies

        Tonight while reading "This is What Would Happen if Everybody Did" to Isaiah, we came to the "Always cry?  This is what would happen if everybody did" and I pointed out to him all the people crying.  He said, "n', spank them!"  Then we came to "stay up?  This is what would happen if everybody did"  He saw all the people with their mouths wide open (yawning) and said, "spank, spank, spank!"

 

 

    Noah got a birthday card in the mail from some friends of ours and said, "Bekah!  Look at my card!  And they spend me a dollar!"

  Something to Laugh About

~Why city folks shouldn't move to the country (this is an actual poster)

 

 

 

The Recipe Box

Chicken-Cheese Crêpes 

 

 These are good with yummy oatmeal rolls! 

 

Chicken-Cheese Crêpes

6 tablespoons of butter

1/3 C. flour

a dash or two of salt

2 C. milk

1 C. chicken broth

1/2 C. shredded Swiss cheese (I also used cheddar cheese....mainly because I didn't have enough Swiss :-) 

2 T. snipped parsley

Several dashes bottled hot pepper sauce

2-1/2 oz. jar sliced mushrooms, drained and chopped

10 oz. frozen peas

2 C. cooked and chopped chicken

1/2 C. chopped red bell pepper

12 basic crêpes (recipe below)

Paprika (optional)

 

For cheese sauce, in a medium saucepan melt butter. Stir in flour and salt. Add milk and broth. Cook over medium heat until thick and bubbly. Stir in cheese, parsley, and hot sauce. Cook until cheese is melted and then take out 1-1/2 C. for later. Stir in drained mushrooms.

For filling, cook peas and drain. Combine peas, chicken, and red bell pepper and the reserved cheese sauce.

Spread 1/4 C. filling over the unbrowned side of each crêpe and roll them up placing them in a greased 12" X 7" baking pan. Pour the sauce over the crêpes and sprinkle with paprika. Bake at 370º F. for 18-20 minutes. Makes 6 servings.

I double the chicken-cheese crêpe recipe and do one and a half recipes of the crêpes.

 

Basic Crêpes

In a bowl combine 1 cup of flour, 1-1/2 cups of milk, 2 eggs, 1 tablespoon of cooking oil, and 1/4 teaspoon of salt and beat really well.

Spoon about 3 tablespoons of batter into a heated and greases skillet and cook until light brown. Cook only one side. Grease skillet occasionally. (The unfilled crêpes freeze well [up to four months] by placing a piece of wax paper between each one. )

No Time for Anything Else!

   Last week, an older gentleman was asking me many questions about me and my family : D   I am quite used to this by now, and it is actually fun to me to answer such questions.  After all, when you are differnent than most people you have to be willing to answer lots of questions, or else go hide!  Being the sociable homeschooler that I am,  I prefer the first option .

The conversation went something like this...

"Where do you go to school?"

"We're homeschooled"

"Oh! That is good.  Especially with the way that the world is today. Have you graduated?"

"Yes" : )

"Are you going to college?"

"No" : )

" Are you working?"

"No" : ) Then I remember, oh yes, I do teach music lessons, and that usually satisfies most people who think it is very weird when you aren't going to college, and don't have a job : ) So I told him about that, and he said, " Oh great, great!"

   Now, he was being very nice, and wasn't trying to be unkind in any way, but I was talking to Leah about it later and said, "Now how come most people think that staying home and helping your mommy isn't worth anything, but if you tell them you are going to college, or working a job, they are so happy for you?!"    If you think about it, how does it really affect them if I decide to go to college or not?   Or if I have a good job?    I suppose that they probably have an idea in their mind of what "the best" is for you, and they want to see you have that "best" .   When they find out that you aren't going to college or working, then--oh my!--what is there for you to do all day?!  Well, here is my answer...

   Yesterday while I was shopping at Joann Fabrics (one of my favorite stores!) I came across a bin of scrapbooking stuff for a dollar each. I was looking through all these wonderful things, and came across a package of quotes. As I was reading them I found my new favorite quote, which happens to be by Emily Dickinson.

it leaves little time

                                         for  anything else."

 

    This is very true of my life...I am too busy living to go get a job or go to college! I am not saying that to go get a job or go to college is "bad"...it's just not the best for me.  For me, it isn't living! Milking goats, sewing, cooking, gardening, knitting, helping sisters with math, and spending time with friends and family is living. For someone else this might not be living, but for me, it is : )

 

 

 

  Pollyanna cried out in dismay. "Oh, but Aunt Polly, Aunt Polly, you haven't left me any time at all just to--to live."

"To live, child! What do you mean? As if you weren't living all the time!"

"Oh, of course I'd be breathing all the time I was doing those things, Aunt Polly, but I wouldn't be living. You breathe all the time you're asleep, but you aren't living. I mean living--doing the things you want to do: playing outdoors, reading (to myself of course), climbing hills, talking to Mr.Tom in the garden, and Nancy, and finding our all about the houses and the people and everything everywhere all through the perfectly lovely streets I came through yesterday. That's what I call living, Aunt Polly. Just breathing isn't living!"
