Bobbie came home Saturday, she walked a whole 200 feet...and I am trying to figure out all the machines they sent home with her.  The nurses at the Hospital kept calling her the "miracle girl"...they could not believe how well she did and is doing...she is also pain free and has not taken anything for her knee for two days now....Praise God!  She also had a chance to pray with one of her nurses and her roomate...she will be sending her own emails soon...I just don't want her to rush it....she does want me to pass along her thanks (and mine) for your prayers and says Happy Mothers Day to all you Moms out there....

    Hello!  I hope everyone had a Happy Mother's Day.  Mine had it's ups and downs but considering everything that is going on that is to be expected.  After church we went home to eat, then made a quick stop at Hubby's mom's to give her a card.  We then went to see our oldest son, Prince Caspian,  who is still at the grandparent's and then to my favorite restaurant which we have never seen so busy!!!! The good thing is they were give out $10.00 gift certificates to all the moms, so we will be able to enjoy them again soon and hopefully it will not be so busy!!!  Little One was sweetly telling me that I was the best mother he could ever have and of course that totally made my day!!! He gave me a potted flower which was really beautiful and I hope to show pictures of soon.  Prince Caspian gave me a paper flower project that he made which was really sweet.  Last week, he had given me a silver ring that said "Love" on it, which of course I really treasure.

•  We have an important meeting  on Wednesday concerning Prince Caspian that we are praying goes well.

• Little One has some anger issues that need to be addressed.

•Drink more water- Getting better, but still not enough
•Take vitamin regularly - Still having trouble with this one.
•I need to start some gentle exercises

• May. 10, 2008 - Shrimp Gumbo Casserole

Here you go, Maleesa! I hope that you enjoy it.

 

1 cup finely chopped onion

1 cup finely chopped celery

2 tablespoons cooking oil

1 141/2 oz. can chopped tomatoes

2 bay leaves

1/2 tsp. dried thyme

1 10oz. package frozen okra

1 tsp. lemon pepper seasoning

1/2 tsp. black pepper

1/2 tsp. garlic powder

1 cup of chicken or fish stock ( I made broth w/ chicken bouillon cube)

2 cups shrimp, cleaned, peeled and deveined

In an iron skillet saute' onion and celery in the oil. Add tomatoes, bay leaves, thyme, okra and seasonings. Pour in stock. Cover pot and simmer for 30 minutes. Remove from heat and add shrimp. Stir in. Prepare topping.

Topping:

Mix your favorite cornbread recipe. This recipe called for a box of corn muffin mix but I don't like how that tastes so I make my own cornbread.

 

Preheat oven to 400 degrees. Drop cornbread mix by the tablespoons on top of hot shrimp mixture, leaving center uncovered. Bake 15-20 minutes.

Behold (looky-looky!)! See what we FINALLY have hooked up? Didn't James do a good job? Oh no, I am not talking about cooking the food! Ha!

 

I am talking about this.

 

The gas company came and set out tank on Friday. James set to work in getting our stove ready to go. We've had it for six months but with no gas. So, it's finally hooked up and in full use. I can finally use my much loved cast iron pots and pans again. I could not use them on the smoothtop.

In other BIG news.... we have water! Yes, yes, yes! We have water on the new side! I am not happy how it came about though. James stays up almost all night to do the plumbing. I woke up at 3:45 and he was still outside, working! He got to bed at about 4:30am and slept till about 9:30am. Ever since he's been ont he go again, tweeking the plumbing and hooking up the gas water heater. Now he's at our neighbor's helping her with her a/c unit. He wouldn't have worked all night but he had a call to go on for work last evening, which was not his evening to be on call.  He is not suppose to be on call this weekend so we will see if this pans out or not.

Have a great weekend! I have plenty of chores and work to do as well but can hopefully update more on Monday.

My oldest daughter, who is also one of my dearest and best friends, sent me an e-card this week with a Scripture on it that is not just a Psalm, but a song too. Psalm 3:3 But thou, O LORD, art a shield for me; my glory, and the lifter up of mine head. Oh how I love the Lord. Oh how I love the undeserved gifts He has given me. Gifts like my husband and my children. Next to my salvation and relationship with the Lord, they are IT. This verse was a great encouragement to me, and instantly I started singing it. God, our God who is our ever-present shield, is also our glory, and the lifter of our heads.

I'm pretty excited...tomorrow I have the opportunity to be a presenter at a local curriculum fair.

I get to take samples of the curriculum that we have used this year and answer questions from prospective homeschoolers about those curriculums.

I will mainly be focusing on CLE and Five In A Row, but I am taking a few 'extras' along as well.

I am actually pretty excited to have this opportunity, as anyone who knows me well knows that I LOVE to research and talk about all of the different curriculums out there!  To some it may seem like a tedious chore or a day of work...but for me it is a day of FUN! ;-)

I hope you all have a Happy Mother's Day!!!  Here is a news story (click link) to go along with this wonderful day.  It tells that Michelle Duggar, the ultimate mother of the year is pregnant again with her 18th baby.  She is due on New Years Day.  If you are not familiar with the Duggars, they are a homeschooling family in Arkansas, that have been made famous due to specials on Discovery Health Channel.  If you have never watched one of their specials, you really should.  They are a remarkable family.  I really don't know how Michelle does it, but the children seem happy, healthy and very well taken care of.  That was what impressed me the most, how happy and selfless the children were and it made me realize children don't have to be spoiled to happy, in fact it's quite the opposite.  Have a good weekend!

I have several favorite motherhood moments.  I enjoy spending time with my kids.  Each kid is unique and each age is special.  I treasure them all.  If you would like to read some of the motherhood moments I have written on my blog, please click the category "Precious Moments" on my sidebar.  5minutesformom is having a contest: bloggers are to post one of our favorite motherhood moments.  It's difficult for me to pick just one to share because each one is precious to me.  Anyway, I decided to do one that I have never posted on my blog yet.  Here it is:

 

One night my husband and I were on the couch talking and then for some reason (I don't remember) we started to laugh non-stop. (Once we get in that mode of laughing, sometimes it's hard for us to get out of it.) Our middle son who was about 4 at the time asked with a concerned look on his face, "Did you guys have too much sugar today?" He seriously thought that sugar made Mom and Dad laugh uncontrollably :).    You know...what people (especially parents) say about "sugar." :)  Well, his remark didn't help the situation; it made us laugh even more!
