Feb. 2, 2006 - Pancakes: Homemade favorite recipes please
Hi~
I want to get away from boxed pancake mix but I can't find a homemade one that my family likes. I have tried 3 different ones. Do you have a favorite that your family loves??

1 egg
3/4 cup milk
2 T. oil (we use olive oil, but any vegetable oil will do)
1 T. sugar
1 cup flour (we use whole wheat pastry flour, but white flour works great too)
3 tsp. baking powder
1/2 tsp. salt
Mix all the wet ingredients and the sugar together. In a separate bowl, mix the remaining dry ingredients. I use a wisk to stir it together and "sift" it. Make a well in the center of the dry ingredients. Pour the wet ingredients in the well and stir with a wooden spoon only until all the dry ingredients have been incorporated. Do not overstir. It will be lumpy and that's okay. Drop spoonfuls onto a HOT griddle. Flip when the edges look dry and the cakes are a bit bubbly. Cook on other side about the same amount of time. Both sides should be golden brown. Enjoy!
Key elements to good pancakes: Make sure your baking powder is not old. We use Rumford and find it makes everything fluffier. Do not overstir the batter! And make sure the griddle is hot before spooning on the batter.
