Hi Everyone,

sorry it's taken me so long to put in an entry.  The rest of last year was very busy and I just havent gotten to writing since.  So far the new year has been great ecxept that it saddens me to hear about all the damage the fires have done in Victoria (one of the states of Australia).  I'm enjoying the weather where I am at the moment, it's been great. Church was good today, the preacher talked about us storing up for ourselves treasure in heaven, it inspired me to make some investments in heaven.  It's nice to have lots of money or be rich on earth isn't it? So how nice will it be in heaven when our treasure will be of so much more worth than money, and since all of us christians will be spending eternity there we might as well, do you agree?

Here is what you requested yelyah! It's a rich black forest cake and it's very yummy and not to hard to make if you know how to bake. 

 INGREDIENTS

250g butter

1 tabelspoon dry instant coffee( I use substitute coffee called Ecco  most of the time and it tastes just the same to me)

1 1/2 cups hot water

200g dark chocolate, chopped

2 cups sugar

1 1/2 cups self raising flour

1 cup plain flour

1/4 cup cocoa

2 eggs

2 teaspoons vanilla essence

6ooml carton thickened cream (I use a 900ml carton if i'm going to decorate it)

2 425g cans of cherries, drained

PROCEDURE

Grease a deep round 23 cm cake pan, line base and sides with paper; grease paper well.  Melt butter in saucepan, stir in combined coffee and hot water, then chocolate and sugar; stir over low heat without boiling until smooth.  Transfer to large bowl, cool to warm. Beat mixture on low speed with electric mixer; gradually beat in sifted dry ingredients in 3 lots. Beat in eggs one at a time, then essence.  Pour into prepared pan.  Bake in 150'C oven for about 1 1/4 hours.  Stand 5 minutes before turing on to wire rack to cool.  Beat cream until firm peaks form.  Trim the top of the cake to make it flat .  Split cake into 3 even layers.  Place one layer onto serving plate, top with a layer of cream and half of the cherries.  Repeat layering once more, cover the cake with the remaining cream.  Decorate with cherries and chocolate if desired.

KEEPING TIME: 3 days.

This is a recipe for 'Moist coconut cake' and it's really yummy. If you like coconut you should give it a try!

INGREDIENTS

125g butter

1/2 teaspoon coconut essence

1 cup castor sugar

2eggs

1/2 cup coconut

1 1/2 cups self-raising flour

300g carton sour cream

1/3 cup milk

Coconut Ice Frosting

2 cups icing sugar

1 1/3 cups coconut

2 egg whites, lightly beaten

food colouring of your choice if desired

PROCEDURE

Grease a deep 23cm round cake pan; line base with paper; grease paper.  Cream butter, essence and sugar in small bowl with electric mixer until light and fluffy; beat in eggs one at a time; beat until combined.  Transfer mixture into large bowl.  Stir in half the coconut and sifted flour with half the sour cream and milk, then stir in remaining ingredients. Stir until smooth.  Pour mixture into pre-prepared pan.  Bake in 180'C oven for about 45 minutes.  Stand 5 minutes before turning onto wire rack to cool.  Top with frosting when cold.

COCONUT ICE FROSTING

Combine sifted icing sugar in bowl with coconut and egg whites; mix well.  If desired add a bit of food colouring.

KEEPING TIME: 1 week.

I made this as a surprise cake for my Mum's Birthday last year and it was so so yummy!

Hi,

Sorry I haven't written in such a long time.  I'm working on a recipe to post at the moment, because as you will find out I LOVE TO COOK!  its called a Moist Coconut Cake, and it's deliciously moist and coconutty, so stay tuned in!
