Plea for Recipes for Freezer Meals and Mixes Made Ahead!

So there was a great sale on ground beef at our local supermarket last week. The deal was too good to pass up. So I purchased the max amount of 10lbs. With all this wonderful food in tubes, I divided the first 5 lbs. into smaller increments and placed in the freezer. Then I made some meatballs, a meatloaf and browned the rest. I felt awesome for accomplishing this which Im sure most of you amazing ladies already do all the time.?!

So then I pre-made up batches of biscuit mix and cornbread mix and dawili's awesome pancake mix. I was so happy to have some quick things in my back pocket. As I was standing there glowing in my accomplishments, covered in flour and goo...I began to ponder what else I could make and have ready to go in a moments notice. So I thought...I need to put a plea out to all women and their favorite recipes for freezing and for making into mixes ahead of time!

So here is my plea...please share one or two recipes that are family favorites and are great for making ahead!

I got this recipe from a fellow homeschoolmom and the kids devour it! I wouldn't have thought they would like all of the beans, but the sauce is sweet enough with the brown sugar that they love it! We serve it with tortilla chips. (The kids like to scoop). Usually I make a double batch, serve half and freeze the other half. I hope you enjoy it!

Bean Casserole

Brown in skillet:
1 lb ground beef
1/2 lb bacon
1 cup chopped onion

Drain fat. Stir in 1/2 cup catsup, 2 tsp mustard, 2 tsp salt, 4 tsp
vinegar

Combine in 3 quart casserole with:

3/4 cup brown sugar
30 oz baked beans
1 cup kidney beans
1 cup lima beans
15 oz can chick peas (garbanzo beans)
1 jar small onions (I alwasy omit b/c it's not worth the anxious
glances when they spot them in the dinner)

Combine hamburger with bean mixture. Cover and Bake at 350 for 40
minutes.

Can be made ahead and frozen in zip lock bags prior to freezing.

Oct. 20, 2006 - Cheesy Chicken Bake

This is SOOO yummy! I got the recipe at church.

Ingredients:
1 14.5 oz. can chicken broth
1 can cream of chicken soup
1 can cream of celery soup
1/2 cup milk
1/2 cup butter
2 T. minced onion
1/2 t. black black pepper
1 lb Kluski noodles (par-cooked)
1 lb. cooked, diced chicken
2 cups shredded cheddar cheese

Melt butter.
Mix butter, soups, chicken broth, milk, pepper, and onion in a bowl. Add chicken, noodles and cheese. Mix well. Place in 9X13 pan. Bake at 350 for 35-40 minutes.

I am telling you -- this is a hit whenever it is served by our serving group!!

I hope you like the pancakes! We like to put berries in them a lot of the time...
I am also trying to gather as many bulk cooking recipes as I can, and hopefully put some of them to use!
One thing I do like to do is make several of a favorite meal. My favorite one to do that with is Shepherd's Pie, I usually try to make 3 big ones (I use 9x13 baking dishes and not pie plates- I have a lot of mouths to feed!) and put 2 in the freezer. That's a lot of mashed potatoes to make at once, but there's 2 very hearty meals ready in the freezer!

I'll be making up a batch this weekend I think, unless I go into labor (please, please, pray that I go into labor! LOL! not that I don't want to cook, I just want to have this baby!)
