Here is a recipe for meatless and dairyless fare: Three-Bean Soup 1 large onion (I almost always use less onion than the recipe calls for so use to taste) 1 medium green pepper (can use less if it is too strong of a flavor) 4 garlic cloves, minced 2 tsps olive or canola oil 1 16 oz can kidney beans, rinsed and drained 1 15 oz can refried beans (vegetarian kind) 1 15 oz can black beans, rinsed and drained 2 cups vegetable broth 1 14.5 oz can stewed tomatoes, cut up 3/4 cup salsa (I used Pace) 2 teaspoons chili powder 1/2 tsp black pepper 1/2 teaspoon to 1 teaspoon ground cumin (again, to taste) In a large saucepan, saute the onion, green pepper and garlic in oil until tender. Add the remaining ingredients: mix well. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Yield 8 servings.
