In an effort to save some time (to spend more time outside with the kiddos) I am trying to do some crockpot cooking along with grilling. This recipe is easy and from Menus4moms.com.
Roast sticky Chicken
1 large roasting chicken
1/2 tsp black pepper
1/2 tsp garlic powder
1 tsp white pepper
1 tsp thyme
1 tsp onion powder
1 tsp cayenne powder
2 tsps paprika
4 tsp salt
In a small bowl, thoroughly combine all the spices. Remove giblets from chicken, clean the cavity well and pat dry with paper towels. Rub the spice mixture into the chicken both inside and out, making sure it is evenly distributed and down into the skin. Place in a resealable bag and refrigerate overnight.
When ready to roast the chicken, stuff cavity with onions and place in crockpot. Cook on low for five hours. The pan juices will start to carmelize on the bottom of the pan and the chicken will turn golden brown. Use a meat thermometer to ensure that the meat is thoroughly cooked (180 is well done for whole chicken). Let chicken rest about ten minutes before carving.
Now get it ready relax and enjoy! I plan on using this recipe often, we've had it several times already and its very yummy. It will be great to come home to a ready meal after playing at the pool all day!
