Living off of the land

In a recent post, I discussed the almost lost art of baking.  I would now like to discuss living off the land.

Being a military family overseas, we are not in a position to live off the land.  I'm praying and planning for the time when we eventually settle down into a home of our own.  I'm already collecting recipes for canning and freezing (if you have any to share I would love them).

I remember growing up and having a garden and going out and picking fresh green beans off the vines and eating them right there.   Nothing is better than fresh strawberries and raspberries off the plants.  Yummy jams and sweet pickles made.    Canned tomatoes to make homeade spaghetti sauces and chili.  Yum.

I read and admire the many families out there who are "living off the land".  From growing their own fruits and vegetables to hunting venison and raising chickens, cows, and piges.  Admire and envy.  Hopefully, we too, will one day be able to do this for our family.

I was also wondering if you had any recipes to share for baking bread or rolls from scratch.  I've found some recipes, but not all that I would like to have.  Also, I would love to have a recipe for sweet tasting corn bread.  The ones, I've tried are not sweet and that's what my family prefers-mostly because I do, hehe.

Sweet Cornbread

¾ cup sugar
2 eggs, beaten
2 cups flour
1 cup yellow cornmeal
1 Tbsp. baking powder
¾ tsp. salt
2-1/2 Tbsp. melted butter
1-1/2 cups milk

Combine the sugar and eggs. In a separate bowl, sift together the dry ingredients and then add them to the egg mixture. Stir in the butter and milk and beat together the ingredients quickly. Pour mixture into a greased 9”x13” pan and bake at 350 degrees for about 30 minutes. Serves 8-12.
