Some Breakfast recipes

I thought I would share some breakfast recipes for everyone.  We use both of these in my family and really enjoy them.

Egg Casserole

1 lb sausage, browned and drained

6 slices of bread-cubed

2 cups milk

4-6 eggs

1 tsp mustard

1/2 tsp salt

4 oz cheddar cheese

1 small onion, chopped

ham-optional-1/3 thinly shaved and diced

Spray 9x13 pan.  Mix all together and put into pan.  Refrigerate overnight or 8 hours.  Bake uncovered for 50 minutes to one hour at 325.

 

Southwest Sausage Bake

6 flour tortillas (10 inch) cut into 1/2 inch strips

4 cans (4ozs each) chopped green chilies, drained

1 lb bulk sausage, cooked and drained

2 cups (8oz) shredded Monterey Jack cheese

10 eggs

1/2 cup milk

1/2 tsp each salt, garlic salt, onion salt, pepper and ground cumin

2 medium tomatoes, sliced

sour cream and salsa

In a greased 9x13 baking dish, layer half of the tortilla strips, chilies, sausage and cheese.  Repeat layers.  In a bowl, beat the eggs, milk and seasoning; pour over cheese.  Sprinkle with paprika.  Cover and refrigerate overnight.

Remove from refrigerator 30 minutes before baking.  Bake uncovered for 50 minutes.  Arrange tomato slices over the top.  Bake 10-15 minutes longer or until a knife inserted near the center comes out clean.  Let stand for 10 minutes before cutting.  Serve with sour cream and salsa.

I'll be honest, that we do not use these recipes that often.  Usually on holidays or other busy mornings.  My kids prefer fruit and muffins or breads for breakfast over eggs and bacon-although bacon and pancakes they inhale.  I don't offer that often because its not a great breakfast.  Another favorite, is hard boiled eggs.  Although they will eat cooked eggs, I can usually get them to eat hard boiled eggs more often.

I'ver made the first recipe and love it. I'm copying the second to maybe try this weekend. Hopefully, the butcher will be open today. I can't have sausage with msg and the butcher sells fresh, yummy sausage with "real" spices only.
