Holiday traditions part 3

I remember putting up all the Christmas decorations when I was a child.  What fun we had!!  The tree was of course, the center of all the attention.  When we were younger, my brother and I made decorations for the tree.  We would spend hours tracing cookie cutter shapes onto construction paper.  After we cut them out and decorated them with crayons, we punched holes in the top, ran some yarn and hung them on the tree.  The best thing however, was the paper chain made from red and green construction pepper.  Two years, ago, my kids and I made a paper chain and hung it on the tree.  They had a blast!!  Last year and this year, I forgot to order red and green paper.  I'm off to the store later to see if I can get enough multi packs to make a chain this year!! 

Here's some recipes for some favorites for Christmas!!

Soft Batch Ginger Snaps

2-1/2 cups flour

2 tsp baking soda

1/4 tsp salt

1-1/4 tsp cinnamon

1 tsp ginger

1 tsp cloves

1 cup brown sugar

3/4 cup butter, softened

1/2 cup light molasses

1 egg

Cream together butter, molasses and egg.  Sift together dry ingredients and add to the creamed mixture.  Roll into one inch balls and roll into sugar.  Bake on ungreased cookie sheet, 12-15 minutes at 350.

Cathie's Easy Fudge

My dear friend Cathie gave me this recipe (thanks girl!!) and we love it.  It is soooo easy!!

3-1/2 cups powdered sugar

1/2 cup cocoa, unsweetened

1/4 tsp salt

1/2 cup butter

1 tbsp vanilla

1/4 cup milk

1 cup nuts

Combine the first three ingredients in microwave dish.  Cut butter into chunks and drop into dish.  Microwave on high for 1-2 minutes until the butter melts.  DO NOT STIR YET!

Add milk and stir until smooth.  Microwave on high for another minute.  Stir in vanilla and nuts and pour into a buttered 8in square dish.  Chill for one hour.  Cut into one inch pieces.

Creamy Peanut Butter Fudge

This is my hubby's favorite.  How he loves his peanut butter!!!

4 cups white sugar

1 cup light brown sugar

1/2 cup butter

1 (12oz) can evaporated milk

1 (7oz) jar marshmallow creme

1 (16oz) jar peanut butter

1 tsp vanilla extract

Grease a 9x13 baking dish.  In a medium saucepan, over medium heat, combine the sugar, brown sugar, butter and evaporated milk.  Bring to a boil, stirring constantly and boil for 7 minutes.  Remove from heat.  Stir in marshmallow cream until well incorporated and melted.  Stir in peanut butter and vanilla until smooth; spread in a prepared pan.  Let cool before cutting into squares.

Okay, I am going to try this fudge. The other times I have made it, it didn't turn out. So I am trusting you!
