I found this recipe online, but am not sure where. It is super!
Crockpot Italian Beef and Noodles
2-3 lb chuck roast, cubed
1 large yellow onion, sliced extra thin
1 packet onion soup mix
1 Tbsp house seasoning (I used McCormick's Montreal Steak Seasoning)
1/2 tsp dried oregano
1 Tbsp dried basil
1 can plain diced tomatoes
1 cup sliced fresh mushrooms
2 Tbsp balsamic vinegar
1 pkg wide egg noddles
Slice chuck roast into bite-sized cubes. Place chuck evenly in bottom of crockpot. Sprinkle onion soup mix, house seasoning, oregano, and basil over meat. Spread thinly slice onions on top. Pour diced tomatoes (undrained)on top of onions and then spread mushrooms over top of tomatoes. Drizzle balsamic vinegar over all. Cover and cook in crockpot on low for 6 to 8 hours. (I cooked on high for five or so.) Serve over wide egg noodles.
