Oct. 7, 2009 - No-bake Cherry Cheesecake
I LOVE this recipe! Everyone in my family does.
No-bake Cherry Cheesecake
Crust Ingredients
2 1/2 cups graham cracker crumbs
6 tablespoons sugar
2/3 cup butter, melted
Cheesecake Filling Ingredients
2 cups cream cheese, at room temperature
2 teaspoons vanilla
2 cups powdered sugar
3 cups whipped cream*
Combine crust ingredients in a bowl and mix well. Press the crust mix into a 9 x 13. Cover and refrigerate while you prepare the filling.
To make the filling, beat the cream cheese, vanilla, and powdered sugar on high until mixed. Add whipped cream and continue to mix on high until light and fluffy, about 2 minutes. Spread evenly on the graham cracker crust. Cool in the fridge for a couple hours before eating.
*When we make this we use homemade whipped cream. To make the 3 cups whipped cream used in this recipe combine these in a bowl:
1 3/4 cups heavy whipping cream
1/2 powdered sugar
Beat with an electric mixer for a couple minutes, until fluffy and stiff!
