Tomato Soup

Posted in Recipes
It is a very satisfying feeling to create a recipe that people enjoy. I've never done this before. I have change a few things in other people's stuff, but never made up one on my own from scratch before. So, I have put it here to share it with you! It even comes with step by step pictures for those of you, like me, who are visually inclined. I hope you try it! I hope you like it! Please let me know if you do. Thanks!

“Marie’s Chewable Tomato Soup”

(Named by Bob)

Preparation time: 40 minutes (Not fast, but easy and delicious!)
Makes roughly 4 ½ cups of soup (If no water is added)

1 onion - chopped
3 cloves garlic – minced
1 med. carrot - grated
1 stalk celery – chopped fine
1 Tbsp. oil
2 tsp. dried basil or 24 fresh basil leaves
1 tsp. salt
¼ tsp. black pepper
1 cube of broth or Tbsp. of broth granules (any kind)
2 - 14.5 oz. cans of tomatoes (any kind)
2 – 8 oz. cans of tomato sauce (any kind)

Sauté the onion, celery, garlic, and carrot in the tablespoon of oil in a 2 quart stew pot, over a medium flame. Make sure to have a cup of water handy to add in as necessary to keep the vegetable from sticking or burning to the bottom of the pan. Cook them until the celery is soft enough to be broken with a wooden spoon. (Not so it “snaps” in half, but just breaks) All the vegetables will look dull when they are ready to become soup.

While you are sautéing the vegetables, open the cans of tomatoes and the sauce; and dump them into a food processor or a blender. Put all the spices in with the tomatoes.
Liquidize the tomatoes and spices together.

When vegetables are ready, pour the tomato mixture into the pan with the vegetables. Stir well. Reduce to a low flame, add enough water to make it the consistency that you desire, and just bring to a boil.

Enjoy!

Things that we enjoy adding in that put it over the top:
-    Parmesan cheese
-    A tablespoon of fat free yogurt

I hope your family enjoys it as much as mine. Even our two year old likes it and asks for more.
Enjoy,
Marie

Oh, that looks yummy. Of course, I am a big tomato fan. My family, on the other hand, does not enjoy tomatoes like I do. Do I dare make this? Can I get away with it by saying but it came from Shutterbug? hmmm. I guess I can make it along with something else so everyone can have a choice, or maybe not. hehe.
Thanks for all the pictures, they do help. I rarely will check out a cookbook at the library if it doesn't have pictures. :)
