Wild Rice Recipe

I have another recipe to share with all of you. My husband came up with this.
We all love it!


Wild Rice With Raisins and Pinenuts
4 Tblspn. Butter
½ large onion or whole small - chopped
1 apple - chopped
¾ cup raisins
½ lemon –juiced
½ c. pine nuts
3-4 c. Wild Rice - already cooked (See bottom of this post for directions)
2-3 Tblspn. chopped cilantro

Sauté onion in butter, ‘till translucent.

Add chopped apple. You can peel it or leave peel on. If you cook an apple with the skin on too long, it may become separated from the apple. (Irritating, but not deadly, that I know of.)

Juice the ½ lemon.

Pour in some raisins.

 Now comes the wild rice. Once you’ve put this in, you’re committed to stirring.
Throw in the pine nuts.

Last but not least, the cilantro. It goes in when everything else is hot. This totally makes it. Fresh cilantro will make this dish “sing”. If you're not a big cilantro fan, you could try fresh basil. It would also go well in this dish.

Once everything is hot, serve it up and enjoy!
Cooking Wild Rice is easy.
2 c. Wild Rice
3 c. water
(Pan with a lid)

Put water and wild rice in the pan. Turn heat to high. Wait for it to start boiling. As soon as it starts to boil, put the lid on and turn the heat to as low as it will go without going off. Set your timer for 25 min. Go do something else until your timer goes off. Don't lift the lid. I know you will be tempted to peak, but don't, it lets out precious steam. When your timer goes off, turn off the heat. remove pan to a cool burner or to a trivet. DON'T lift the lid yet. let it set for another 10 minutes. Now you can start getting the rest of this yummy recipe together. :) When your timer goes off after the additional 10 minutes,
"you may now lift the lid". :) It should be sort of a soft-chewy, just starting to split open. Enjoy!

(Not so) Wordless Wednesday!

Bran Muffins


1 ½ c. Flour (I use whole wheat, you can use whatever you want)
1 c.     Wheat Bran
1 tsp.   Baking Powder
1 tsp.   Baking Soda
¾ c.     Milk
1          Egg
2 Tbsp. Oil (Olive, Butter, Coconut)
½ c.      Molasses
½ c.     *Fresh or frozen fruit 


Mix dry ingredients together. Add liquid ingredients into same bowl stir. Last, add *blueberries, raisins, or other fruit, stir.

Fill greased, sprayed, or papered muffin tin with batter and bake.

Preheat oven to 400 degrees.
Bake for 15-20 min. (I bake mine for 18 on middle rack of oven and they come out perfectly!)

*If you do not have any fresh fruit adding a ½ - ¾ cup of applesauce helps make them nice and moist!

Tomato Soup

It is a very satisfying feeling to create a recipe that people enjoy. I've never done this before. I have change a few things in other people's stuff, but never made up one on my own from scratch before. So, I have put it here to share it with you! It even comes with step by step pictures for those of you, like me, who are visually inclined. I hope you try it! I hope you like it! Please let me know if you do. Thanks!



“Marie’s Chewable Tomato Soup”

(Named by Bob)

Preparation time: 40 minutes (Not fast, but easy and delicious!)
Makes roughly 4 ½ cups of soup (If no water is added)

1 onion - chopped
3 cloves garlic – minced
1 med. carrot - grated
1 stalk celery – chopped fine
1 Tbsp. oil
2 tsp. dried basil or 24 fresh basil leaves
1 tsp. salt 
¼ tsp. black pepper
1 cube of broth or Tbsp. of broth granules (any kind)
2 - 14.5 oz. cans of tomatoes (any kind)
2 – 8 oz. cans of tomato sauce (any kind)


Sauté the onion, celery, garlic, and carrot in the tablespoon of oil in a 2 quart stew pot, over a medium flame. Make sure to have a cup of water handy to add in as necessary to keep the vegetable from sticking or burning to the bottom of the pan. Cook them until the celery is soft enough to be broken with a wooden spoon. (Not so it “snaps” in half, but just breaks) All the vegetables will look dull when they are ready to become soup.

While you are sautéing the vegetables, open the cans of tomatoes and the sauce; and dump them into a food processor or a blender. Put all the spices in with the tomatoes.
Liquidize the tomatoes and spices together.

When vegetables are ready, pour the tomato mixture into the pan with the vegetables. Stir well. Reduce to a low flame, add enough water to make it the consistency that you desire, and just bring to a boil.

Enjoy! 


Things that we enjoy adding in that put it over the top:
-    Parmesan cheese
-    A tablespoon of fat free yogurt
