• Nov. 4, 2006 - Homemade Caramel Popcorn
Some friends came over last weekend and introduced us to this wonderful snack. Don't you just love friends like that? I'm not very kitchen-gifted, but God has blessed me with lots of friends who know how to make lots of yummy things. I'm hoping one day, they'll rub off on me.
Caramel Corn (from Lane Ann Miller's Cookbook)
20 c. popped popcorn (unsalted- the syrup mixture is seasoned plenty)
1-2 cups unsalted peanuts (optional)
1 stick butter
1/2 cup white corn syrup
2 cups brown sugar
1/2 tsp. soda
1 tsp. vanilla
1/2 tsp. salt
Melt butter, corn syrup, and brown sugar. Boil for 3 minutes. Add the rest of the ingredients and mix. Pour over the top of popcorn and mix well. Turn out into a large, greased roasting pan. Bake at 250 degrees for 1 hour, stirring every 15 minutes.
