Lessons Learned on the Farm


• Dec. 4, 2008 - Tony's Taco Soup

This soup is one of our Fall/Winter favorites and is always a hit with our friends!

Taco Soup

Combine 1 can of each:
whole kernel corn
chili beans
pinto beans
black beans
rotel tomatoes
tomato sauce

Add: 2 small cans of mexican corn
1 pkg of dry ranch seasoning
1 pkg of taco seasoning
2 cups of water

Then bring to a boil or put in crockpot to cook.

*If you like, you can add 1 - 2 lbs of ground beef.

Serve with nacho chips and top with mexican cheese.

Yum!

This soup is delicious. You really can't go wrong with the recipe. I don't usually add black beans (they don't like me). It is so good on cold days. Actually it's good on any day. Can you tell I love this soup?

That sounds pretty good. I'd have to leave out the mexican corn, and switch from rotel to just regular tomatoes....probably more for me (and Daniella) than anyone else! I'm going to ask the crew if they it sounds like something they'd like to try. I'm so ready for some new recipes!

These are two of our favorite recipes. We call the fried snowflakes Elephant Ears! I will be making a large pot of Taco Soup and freezing it. This will be our meal the day we come home from Ky. from celebrating the holidays with our family. Enjoy your Christmas season.

Hello. What are "rotel" tomatoes? This looks like the soup I make with my leftover chili and taco meat. The ranch dressing addition sounds interesting. I'm going to try this today with the enchiladas I had planned. Thank you!

I just have to share. The music on your blog stopped my very active 3 y.o. in her tracks and made her stop and listen to it thoughtfully for about 5 minutes straight. She got upset with me when I moved my laptop away. She especially loved Josh Groben. It was very cute.

Do you drain the cans of corn and beans. or just open the can and dump in the pot?

Hey, this is my Grandmom's recipe, except that she definitely adds the browned ground beef. And we use regular tomatoes and about 1/3 can green chiles so we can control the heat. Also she adds a can of cream of potato soup to bind it all and thicken it a little. Really makes it seem rich!
Anonymous, you can drain the cans or not! That's the joy of this recipe.... it's so flexible!
