Old Fashioned No-Bake Cookies

Old Fashioned No-Bake Cookies

from the kitchen of Penni Hill

 

2 c sugar

½ c milk

1 tsp vanilla

¼ c cocoa

1 stick butter or margarine

Combine in a large pot on the stove. Bring to a rolling boil and let boil for 1 minute.

Remove from heat and add ¼ c peanut butter and 3 c rolled oats. Mix well.  Using a tablespoon, drop cookie batter onto waxed paper making cookies the size you want. Let sit till cool. Enjoy!

 

If they have boiled for too long, it will make dry crumbly cookies. Put them all back in pot, add approx 2 tbl of milk and cook just till melted well. Continue as before.

 

Note: if it is a humid day sometimes these don’t set. If that is the case, scrape all cookies off wax paper and put back into pot. Melt and bring to a boil again. Let boil about 30 seconds and add approx ¼ c – ½ c more of oats. They should set up fine this time.

The years have slipped bye so quickly. It seems as though it was just yesterday we were starting out homeschooling with a six year old and a 3 year old. Now my sons are 21 and 18 and this is my last year of homeschooling. A new season in life is ahead ~ the best is yet to come.
