Last weekend we found not one but TWO Salton 5 cup yogurt makers at a garage sale for $5 bucks. Now yogurt is something we go through A LOT of. When I am out of sour cream I use yogurt. When we are out of pancake syrup we use yogurt. When we are out of milk we use yogurt. Yogurt is a staple at our house and if I could afford it I would buy goat's milk yogurt because that is the BEST. Sorry a bit distracted - back to the yogurt maker. Now I know that there are simpler ways then buying a machine and one can even use ones own crock pot to make the creamy tangy stuff but five bucks -- who could go wrong with five bucks? and since the kids can do it on their own in this machine then easier for me. 1ds12y read the directions before me, cleaned both machines and was just hopping to get started so last night we put the whole sha-bang to work and you know what? It worked! We had delicious yogurt this morning without fillers and preservatives (we always sweeten our own so they know nothing about the kiwi gava go-go bean flavored stuff).
It actually was not at all monumental and proclaimed, "It tastes like yogurt". ~ what? like it was supposed to taste like angel food cake??? 1ds12y had quite the culinary experiment making a variety of flavors. I of course am still looking for the creamiest tastiest yogurt that I had some 20 years ago in Germany with my raw oatmeal (I loved raw oatmeal but always thought it was just a quirk of my own and had no idea that other cultures preferred their oatmeal uncooked. Since then RAW eating has taken on a mind of its own and everyone eating raw seems to know about my fetish). The bed and breakfast I stayed at in Germany, served it with a selection of cold cuts and cheese and I will always remember that as being a bit odd for breakfast. however my search for the yogurt continues. I have come close with goats milk but not quite so we also tried Creme Bulgare which is the same yogurt process made with straight creme instead of only milk. This too was delicious and so easy my child has declared himself the yogurt making expert though he thought that the coffee flavored one sounded a bit odd - I concurred. I may even get the gumption to put some to drain in a cheese cloth and make labneh (strained yogurt that is similar to cream cheese). It has been the best $5 bucks I've spent in a long time (okay the 2nd best because the $5 yard sale hammock was better - its all a win win situation). Now I need a cow to keep us in cream and milk so we can make lots of YOGURT either that or a goat LOL.
YOGURT FLAVORS:
CHOCOLATE - ds used chocolate syrup, hot chocolate mix and a touch of powdered cocoa for taste LOL
MULBERRY - used only the mulberry syrup that was canned back in May. It needed no other sweetener
VANILLA - vanilla and honey
APPLE CINNAMON - used applesauce, cinnamon & honey
CREME BULGARE was too delicious on its own to add anything but it would be decadent with any of the above

This is good for all those chocolate crosses and easter bunnies that the kids received.
Chocolate Fudge Fondue
12 oz. Package of Semi-Sweet Chocolate Chips
1 Can of Eagle Brand Milk
Microwave the chocolate chips until they are soft and melted (about 2 minutes). Stir in the Eagle Brand Milk until it is mixed well.
Serve with strawberries, bananas, cookies, pound cake, or other "dippers."

Quick Turkey & Dumplings
½ cup milk
1 can corn
1 cup cut-up leftover turkey
1 can creamy mushroom soup
1 cup Bisquick
1/3 cup milk
Heat ½ cup milk, the canned corn, mushroom soup and turkey to boiling in a saucepan.
Stir Bisquick mix and 1/3 cup milk until soft dough. Drop dough by 8 spoonfuls onto turkey mixture.
Cook uncovered over heat 10 minutes. Cover and cook 10 minutes longer. Makes 4 servings.
Double the recipe for more servings.

Crabby Salad
1 lb cooked shell macaroni or pasta of choice
1 pkg imitation crab meat sliced into chunks
1 small red onion diced
celery seed to taste
1/2 C Ranch dressing
Combine together and chill. May need to adjust amount of dressing to desired consistency.
Serve with fresh cherry tomatoes, bread sticks and watermelon for dessert.

Chinese Corn Soup
2 cans cream style corn
2 cans of water or 1 chicken stock, 1 water
Bring to a boil
Beat 6 eggs together. (do this in a glass measuring cup with a spout).
Stir soup rapidly while drizzling eggs in slowly.
Serve when eggs have turned white and all is good and hot.
Serve with premade Frozen Egg Rolls made according to directions. Sherbet and fortune cookies for dessert.

Here is the next instillation of Kid Cook meals since the first meal turned out so well and my boys had such pride in themselves. All of these menus assume that the child can carefully use a knife, a can opener, the oven & the stove with pot holders. I do not yet let my kiddos cook hamburger, bacon or ground turkey because of the possibility of grease burns. *Instead I pre-cook these, actually in the crock-pot and freeze in meal size portions. When it is time to use, depending on the recipe, I either thaw and use, or in the case of this recipe we just add it frozen.
Can-Can Soup
1 lb. browned ground beef (pre-cooked & frozen*)
1 can stewed tomatoes
1 can Rotel tomatoes & peppers mix
1 can tomato soup
1 can vegetable beef soup
1 can garbanzo beans (drained)
1 can kidney beans (drained)
2 cans VegAll vegetable mix
handful of pasta
1. In a large soup pot, add all ingredients, using the soup cans to also add water (2 cans of water)
2. Just when boiling, add pasta & slow simmer till cooked through (about 10 minutes)
Green Onion French Bread
1 loaf French bread
4 to 6 green onions
1/4 cup (1/2 stick) softened butter
1. Heat oven to 375 degrees F.
2. Trim and chop the green onions (including the white and green parts). With a fork, mash the green onions into the softened butter.
3. Cut the loaf diagonally into 3/4 inch slices—but try not to cut the loaf all the way through. By leaving the bottom of the loaf just barely uncut, it holds together better.
4. Place a length of foil slightly longer than the loaf on a baking sheet. Place the loaf on the foil.
5. Spread the butter mixture on one side only of each slice, and smear a little on the top of the loaf as well.
6. Fold the sides of the foil up loosely around the loaf, leaving the top exposed. Bake for 5 to 10 minutes, or until the butter has melted into the slices and the top is brown. Serve in the foil, allowing guests to cut or pull each slice off at table. To keep the foil-wrapped loaf warm, put it in a bread basket, or wrap a towel around it.

Chocolate Caramel Cake
1 Chocolate Cake Mix (+ any ingredients to make it)
Hershey's Chocolate Syrup
Smucker's Caramel Ice Cream Topping
1 Medium Size Container of Cool Whip
Bake cake according to package directions -- Dump all the ingredients in a resealable bag, seal it, and let your child mix the batter by squishing it up. Cut a corner of the bag to pour batter out.
While the cake is still warm, poke holes in it with a fork. Pour chocolate syrup and caramel sauce over the top of the cake. Be generous! Let the cake cool in the refrigerator and then top it with cool whip. It is wonderful!

Inspired by recent conversation, I have decided to initiate Kids Cook Night where once a week my boys plan and cook dinner INCLUDING clean up afterwards. Okay! Okay! Truth be known, I'm tired of cooking and aspire to one day be lavishly cared for and treated as royalty, that my dear sons would bestow their utmost love for their mother by not making her slave in the kitchen

Well, one can hope right? But sincerely, even bachelors need to know how to feed themselves or at the very least how to use the fire extinguisher! This one looks like a good one to start with and we will work on that gourmet meal for some time in the future:
Tater Tot Casserole
1 lb ground turkey
1 can cream of mushroom soup
1 can green beans
1 can mushrooms stems and pieces
1 large bag frozen tater tots
Worcestershire sauce & garlic powder
Preheat oven to 350 & spray 9 x 13 dish with non-stick spray. In a skillet, brown 1 pound gr turkey, adding Worcestershire sauce and garlic powder to taste. Stir in 1 can cream of mushroom soup, 1 can of green beans (drained) and 1 can of mushroom stems and pieces (drained). Pour into 9 x 13 dish. Top with 1 large bag of frozen tater tots. Bake for 35 - 45 minutes until tater tots are brown and crispy. This recipe says to serve with ketchup. Personally, ketchup is used ONLY if the meal is really bad otherwise we are just gonna forgo that condiment claiming to be a vegetable.
Apple Pie Pizza
This recipe is adapted from a Taste of Home cookbook.
1 Can of Refrigerated Cinnamon Rolls
1 Can of Apple Pie Filling
1/4 Cup Brown Sugar
1 T. melted butter
Cinnamon (to top with)
Separate the cinnamon rolls and roll out or press each one into a 4 in. circle. Arrange the circles on a greased pizza pan or cookie sheet, overlapping the edges so that it makes a "pizza crust." Bake at 400 degrees for about 8 minutes.
Spoon the apple pie filling on top of the crust, leaving 1/2 in. around the edge. Combine the brown sugar and butter; sprinkle over the apples. Top with cinnamon and bake 6-8 minutes longer or until the crust is golden brown. Let it cool for a few minutes and drizzle with the cinnamon roll icing.
