Honey Wheat Bread Watalulu Style

Ingredients:  4 1/2 tsp. regular dry yeast, 1/2 cup warm water (105 to 110), 1/3 C. raw honey, 1/4 C. softened butter, 2 tsp. salt, 1 3/4 C. warm water (see above temp), 1/3 C. flax seed,  3 C. whole wheat flour, 3 to 4 C. all purpose white flour.
Directions:   Dissolve yeast in 1/2 C. water and let it sit while you measure out the honey, butter, salt, warm water, flax seed and wheat flour.  Then mix all together with the whisk attachment in your handy dandy mixer til nice and mixed.  Then switch to the dough hook and add 3 C. of the white flour.  Mix it real well, adding more white flour til not real sticky anymore.  Then, dump it out on a lightly floured work surface and knead by hand about five minutes.  Add a little flour as needed to keep it from getting sticky.  Then kind of form it into a big ball.   Spray a medium bowl with non-stick spray and place dough in it and then roll it around until all sides are coated.  Cover with a small piece of your favorite fabric.   I now sit it on top of the hot water and close the door to the little room it sits in.  Let it rise for 40 minutes.   Meanwhile, you need to spray two loaf pans and remove a rack from the oven so that you have only a rack on the bottom level.  Also, you need to prepare two pieces of aluminum foil to tent the bread with while it bakes.  After the bread has risen, spray the work space with non-stick spray and dump the dough out onto it.  Before you do anything to it, cut it in half.  Then poke it with your fingers and fold it over to get out the bubbles.  Then roll it out with a rolling pin in about an 8 X 12 rectangle and then roll up and tuck the edges and ends under and place it in one of the loaf pans.  Do the same with the other.  Cover the loaves and place them back on the hot water heater for 40 minutes.  At 30 minutes turn your oven on 375 to preheat.  Then place the bread in the oven and set oven timer for 41 minutes.  Set a second timer for 15 minutes.  When that goes off, tent the bread and sit back and let it finish baking.   When it is done, loosen the sides with a knife and immediately take out of the pans and sit them on a rack to cool.  Wait until completely cool to slice.
