(I entered this in our county fair last week and received an honorable mention, which is between a blue ribbon and champion. It was fun to participate and look forward to what the judges thought.)
Crust
1½ C. all purpose flour
½ t. salt
½ C. shortening
1 t. vanilla extract
2 to 3 T. ice water
Filling
1 C. white sugar
¼ C. all purpose flour
2 t. ground cinnamon
6 C. peeled, cored, sliced baking apples
1 C. heavy whipping cream
Directions
Combine flour and salt, cut in shortening until the mixture resembles coarse crumbs. Sprinkle with vanilla and stir in. Sprinkle with water, 1 T. at a time, stirring until pastry holds together. Shape into a ball. Roll out and transfer to a 9- inch pie plate. Trim and flute. Place in fridge to chill.
For the filling, combine sugar, flour and cinnamon. Sprinkle 3 T. of it onto the crust and even out. Top with half of the prepared apples and sprinkle that with half of the sugar mixture. Top with remaining apples, then sugar mixture. Pour cream over all.
Bake 450° for 10 minutes. Reduce heat to 350° and bake for 55-60 minutes or until apples are tender. Use a crust shield to keep from over browning.
