Time to get back to blogging

I decided it was time to get back in the blogging world and start posting more than just recipes, even though I love to cook and try recipes.

We are taking a break right now from schooling, we have VBS next week and then will take a couple of weeks to prepare for our new studies which we will start in July.

We have switched from R & S to Christian Light, and the kids are doing well, we will begin My Father's World Adventures program in July and we are really excited about it, we saw David Hazell speak  at our HS Conference in May, and were so impressed with his spirit and compassion for the Lord and homeschooling. We had done part of their First Grade curriculum so I was already familiar with them.

I was so frustrated and distraught about choices for next year's curriculum, and now I am at peace, dh was very impressed and was the one that encouraged me to use Adventures.  Our plan is to use MFW through high school and with Christian Light I feel like we have a good plan with a good balance of Structured and fun studies along with the fact that I am a big Charlotte Mason fan, and MFW uses alot of her practices.

I hope to post alot about our adventures with Adventures

Easy Lemon Pasta with Chicken

Thumb Up! Easy Lemon Pasta with Chicken   

I made this last night, and it was so good, all of us went back for seconds. It was super easy to make too! thumbs up I copied and pasted from the Food Network the only thing I added was a little lemon zest as well as the juice.

Easy Lemon Pasta with Chicken Recipe courtesy The Neelys

1 pound dried penne
2 chicken cutlets, cut into fingers
salt and freshly ground black pepper
3 cloves garlic, sliced
1/4 teaspoon red pepper flakes
3 tablespoons olive oil
3 tablespoons roughly chopped fresh parsley, for garnish
2 lemons, juiced
1/2 cup grated Parmesan

Cook the pasta in a large pot of boiling salted water, until al dente. Drain well. Season chicken with salt and pepper. Heat a large grill pan over medium high and add chicken. Grill until golden and completely cooked. Remove to a plate and slice.
Add the garlic and red pepper flakes to a saute pan with 3 tablespoons of olive oil and saute until fragrant. Add the cooked pasta and turn heat off. Mix all together.
Remove pasta to a large bowl. Add chicken to the warm pasta and season with salt and pepper. Sprinkle in chopped parsley. Add the juice of 2 lemons and mix. Before serving top with Parmesan.

Diet Soda Cake Recipe

a friend told me about this recipe..it is great!!

 Diet Soda Cake Recipe     

1 18 oz. box cake mix (any flavor)
12 oz. diet soda(drink a gulp and pour the rest of the can into the mix)

mix together and pour into cake pan, bake as directed on the box.
1-2 egg whites (optional) but may help the cake stay together  better.

makes 12 servings..4 pts per serving. if on a diet program.

Suggested Combinations: * yellow cake mix / diet lemon-lime soda
(with a dollop of Cool Whip -- tastes like a "Twinkie") * orange cake /
diet Mountain Dew * cherry chip cake / diet cream soda * diet

American Chop Suey

American Chop Suey(Goulash)
 
1 lb lean ground beef
1 14.5oz can fire roasted tomatoes
1 14.5oz can diced tomatoes
1 8 oz can tomato paste
1 medium onion
1 16 oz box whole wheat elbows
1 teaspoon minced garlic
3 tablespoons olive oil
1/4 cup water
In a large skillet sauté garlic, onion  in olive oil. Add ground beef and cook until beef is browned. Add tomato paste,  diced tomatoes,  and water.

Simmer on low heat for 30 minutes. Cook whole wheat elbows according to package instructions and drain, but do not rinse.

combine all ingredients and let sit for about 10min. and serve.

I served this with sauteed green beans and fresh fruit.

Deluxe Crockpot Oatmeal

Deluxe Crockpot Oatmeal

1 cup regular oats
1 cup peeled, chopped apple
1 cup raisins(or dates or cranberries)
2 cups milk
1/4 cup brown sugar
1/2 tsp cinnamon
2 Tablespoons butter

Spray or butter the inside of crockpot. Put all ingredients into crockpot and stir. Cover and cook on low overnight(about 8 hrs).

you can add a little milk before serving to make it creamier. you can also easily double this recipe for larger families.

Baked Pita Chips

Baked Pita Chips ( I used wheat, and separated each triangle to make two chips from each one.)

Ingredients

    * 12 pita bread pockets
    * 1/2 cup olive oil
    * course salt to taste
    * garlic powder to taste
   


DIRECTIONS

   1. Preheat oven to 400 degrees F (200 degrees C).
 2. Cut each pita bread into 8 triangles. Place  tr iangles on lined cookie sheet.
   3. In a small bowl, combine the oil, garlic, salt,  Brush each triangle with oil mixture.
   4. Bake in the preheated oven for about 10minutes, or until lightly browned and crispy.

Easy Cake Mix Cookies

Easy Cake Mix Cookies

time to make 15 min 5 min prep
1 18 oz. box cake mix (any flavor)
1/3 cup vegetable oil or canola oil
2 eggs
nuts (optional) or raisins (optional) or chocolate chips (optional) or butterscotch chips (any additional ingredients) (optional) experiment with different cake mixes and other ingredients.
  1. Combine cake mix, oil and eggs. Mix well.
  2. Add in extra ingredients (1 cup total).
  3. Bake at 350 F for about 10 minutes.
  4. Remove from oven and let cool on pan for several minutes before removing to rack to finish cooling.
some ideas are: yellow cake mix with chocolate chips and nuts, spice cake with cinnamon chips, orange cake with chocolate chips, caramel cake with toffee chips, banana nut cake with walnuts, devils food cake with white chocolate chips or peanut butter chips, white cake with m & m's, strawberry cake with vanilla chips, lemon cake mix with a lemon glaze. possibilities are endless

Slimmed Down Oatmeal Cookies

Applesauce rounds out the flavor of this quick,

low-fat re-make of classic oatmeal cookies.

1 cup packed brown sugar
3/4 cup unsweetened applesauce
1 large egg white, lightly beaten
2 tablespoons canola oil
1 tablespoon vanilla extract
1 cup raisins
2 cups rolled oats
1 cup sifted cake flour
1/2 cup whole-wheat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt

Position rack in the center of the oven and preheat
oven to 350°F. Line baking sheets with parchment
paper or coat with cooking spray.
Whisk together sugar, applesauce, egg white, oil and
vanilla in a large bowl until smooth. Stir in
raisins. Stir together oats, cake flour, whole-wheat
flour, baking soda, cinnamon and salt in a medium
bowl. Stir the dry ingredients into the wet with a
wooden spoon, mixing just until blended.
Drop the dough by tablespoonfuls onto a prepared
baking sheet, spacing cookies about 1 1/2 inches
apart. Bake until lightly browned, about 15 minutes.
Transfer cookies to a wire rack and let cool.

Healthy Banana Nut Muffins

Healthy Banana Nut Muffins

INGREDIENTS
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat pastry flour
  • 3/4 cup raw cane sugar
  • 1 1/4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 egg whites
  • 1 cup mashed ripe bananas
  • 1/4 cup unsweetened applesauce
  • 1/3 cup walnuts or other nuts

DIRECTIONS

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin tin, or line with paper muffin liners.
  2. In a large bowl, stir together the flour, sugar substitute, baking powder, baking soda, and cinnamon. In a separate bowl, mix together the egg whites, mashed banana and applesauce. Add the wet ingredients to the dry, add nuts and mix until just blended. Fill prepared muffin cups 3/4 full.
  3. Bake for 15 to 18 minutes in the preheated oven.  cool in pan for a few minutes and transfer to a baking rack to finish cooling.

INGREDIENTS

  • 1/2 cup Parmesan cheese
  • 1/4 cup butter, softened
  • 3 tablespoons mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon celery salt
  • 2 pounds tilapia fillets

DIRECTIONS

  1. Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
  2. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
  3. Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

Homemade Chapstick and Dollar Store Hand Lotion

Homemade Chapstick

1 Tbsp. of Vaseline

1/3 tsp. of Honey

1/2 tsp. of flavoring (vanilla, lemon, mint, etc.)

mix all together in a microwavable bowl, about 20 seconds, remove and stir until all ingredients are
mixed together.

pour into containers and let set.




Homemade Dollar Store Hand Lotion

Ingredients

(All these ingredients are Dollar General brand)

    * 1 petroleum jelly
    * 1 aloe vera lotion (green bottle)
    * 2 pink baby lotions
    * 2 containers vitamin E cream

Mix with mixer

You can repack in the jars you emptied or buy new ones if you can find them.

Easy Creamy Chicken and Noodles

Chicken and Noodles

1 bag egg noodles
3 cups water
3 chicken bouillion cubes
2 cans cream of chicken soup
1 can chicken broth
1 cup diced cooked chicken or large can of chicken
dash of poultry seasoning or celery seed

bring the water and bouillion cubes to a boil and add the noodles, cook until tender. DO NOT DRAIN  the remaining liquid. add the cream of chicken soup, diced chicken and the chicken broth and stir until blended. add salt and pepper, add seasoning.

Slow Cooker Enchiladas

Slow Cooker Enchiladas

1 lb. ground beef
1 cup chopped onion
1/2 cup chopped green pepper
1 can (16 oz) pinto or kidney beans, rinsed and drained
1 can (15 oz) black beans, rinsed and drained
1 can (10 oz) diced tomatoes and green chilies, undrained
1/3 cup water
1 tsp chili powder
1/2 tsp ground cumin
1/2 tsp salt
1/2 tsp pepper
1 cup shredded sharp cheddar cheese
1 cup shredded monterey jack cheese
(IN a pinch I use 2 cups of either)
6 flour tortilllas

In a skiller, cook beef, onion and green peppers until beef is browned and veggies are tender, drain. Add the next 8 ingredients; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Combine cheeses. In a 5 qt. slow cooker, layer about 3/4 cup beef mixture, one tortilla and 1/3 cup cheese. Repeat layers. Cover and cook on low 5-7 hours or until heated through.

Mixed Chilie Nuts

**these are hot** but make a great snack or party food


Mixed Chile Nuts

2 Cups dry roasted peanuts
1 1/2 Cups Pecan halves
1/4 Cup roasted sunflower seeds
2 Tbsp. Balsamic Vinaigrette
2 Tsp. chili powder
2 tsp. garlic powder
1 Tbsp. lemon juice
2 Tsp. ground cumin
2 tsp. red pepper flakes

Heat oven to 325.
Put peanuts, pecans, and sunflower seeds in bowl. Add additional ingredients and mix, coating all the nuts well.
Spread onto single layer on baking sheet. Bake 20 min, flipping nuts halfway through.

Black Bean Couscous Salad

Black Bean Couscous Salad  

INGREDIENTS:
1 cup uncooked couscous
1 1/4 cups chicken broth
5 tablespoons extra virgin olive
oil
4 tablespoons fresh lime or lemon juice
2 teaspoons red wine vinegar
1 teaspoon ground cumin
4 green onions, chopped
   
1 red bell pepper, seeded and
chopped( I used tomato)
1/4 cup chopped fresh cilantro(I left this out)
1 cup frozen corn kernels,
thawed(or use one can drained)
1 (15 ounce) can black beans,
drained
salt and pepper to taste

DIRECTIONS:
1. Bring chicken broth to a boil in a 2 quart or larger sauce pan and stir in the couscous. Cover the pot and remove from heat. Let stand for 5 minutes.
2. In a large bowl, whisk together the olive oil, lime juice, vinegar and cumin. Add green onions, red pepper, cilantro, corn and beans and toss to coat.
3. Fluff the couscous well, breaking up any chunks. Add to the bowl with the vegetables and mix well. Season with salt and pepper to taste and serve at once or refrigerate until ready to serve.

Roasted Potatoes, Carrots and Onions

Roasted Potatoes, Carrots and Onions

Yield: 6 to 8 servings
2 Lbs - New red potatoes, cut in half (leave skin on)
1 Lb - Baby carrots
3 medium onions, trimmed, cleaned & cut into chunks
1 Tbls - Olive oil
1 clove - Garlic, pressed
1/4 tsp - Pepper
1/4 tsp - Seasoning salt
3 Tbls - Butter or margarine, melted
Place the potatoes, carrots and onions on a foil lined jelly-roll pan.

you can also do this with broccoli and cauliflower

Healthy White Bean Chicken Chili
   
I took the idea of a basic recipe and created my own..it is really tasty

Ingredients:

(drain all of the canned ingredients)
2 cans of northern beans
2 cans of pinto beans
1 can of rotel tomatoes
1 can of diced tomatoes(seasoned with basil, garlic, oregano)
1 small can of tomato paste
1 bag of frozen peppers and onions(16 oz)
5-6 cups of diced cooked chicken breasts
1 cup of Quaker Instant Barley
2 cloves of minced garlic
1 teaspoon of oregano
cumin, chili powder, salt and pepper to taste

mix all ingredients together and put in crock pot on low until ready to eat!

I am serving it with mexican cornbread

The BEST Chicken Wings ever

Restaurant-Style Buffalo Chicken Wings     

INGREDIENTS:

1/4 cup butter
1/4 cup hot sauce
1 dash ground black pepper
1 dash garlic powder
   
1/2 cup all-purpose flour
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
10 chicken wings

DIRECTIONS:
1.  Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving.

2. In a small bowl mix together the flour, paprika, cayenne pepper and salt. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated. Cover dish or bowl and refrigerate for 60 to 90 minutes.
   

Oh yeah! I love these and they're really easy to make Baking  them instead of fry them  cut down the fat. . I baked on a rack set over a jelly roll pan at 350 for 45 minutes. Then I turned the oven to 375 and sprayed the wings with Pam and let them bake 5 more minutes so they got crispy.(this is the key, don't skip this part) Excellent and you'll never miss the deep fried taste!
