Pumpkin Recipes !!!!

Pumpkin Recipes - Back by Poplular Demand AGAIN LOL

-------> First here is the PUMPKIN PIE SPICE recipe:

4 tbsp cinnamon

1 tbsp ginger

1tbsp nutmeg

2 tsp ground cloves

MIX IT lol

-------> Mom's Pumpkin Puddin':

2 cups FRESH pumpkin

3/4 cups white sugar

1/2 cup bisquick

2 eggs beaten

2 tbsps melted butter

2 1/2 tsp pumpkin pie spice

2 tsp vanillla

12 oz evaporated milk

-COMBINE IN THE CROCK POT (VERY EASY RECIPE!)

-Cook on low 6 to 7 hours -Serve with whipped cream, ice cream, whatever floats your boat LOL

--------> Pumpkin Chocolate Chip Cookies

1 cup fresh pumpkin

1 cup white sugar

2 cups flour

2 tsp baking powder

1/2 cup oil

1 egg

1 tsp cinnamon

1/2 tsp salt

1 tsp baking soda dissolved in 1 tsp of milk

1 cup semi-sweet chocolate pieces

1 tsp vanilla 1/2 cup walnuts (optional)

-Preheat oven to 375

 -Combine pumpkin, sugar, oil & egg, and then dissolved soda

-Sift together flour, baking powder, cinnamon & salt

-Add pumpkin mix, and mix well

-Drop by teaspoonful, on lightly greased cookie sheet -Bake 10-12 minutes

-------> Pumpkin Bread

3 1/2 cups fresh pumpkin puree

1 cup applesauce

1/2 cup butter

2 cups brown sugar

1/2 cup white sugar

7 eggs

4 3/4 all-purpose flour (can substitute rolled oats for some of this if desired)

2 tsp baking powder

3 tsp of the aforementioned PUMPKIN PIE SPICE

1 tsp vanilla (I used real, but you can use imitation as well)

1 1/2 tsp baking soda

1 1/2 tsp salt

-Preheat oven to 350 degrees

-Grease and flour three 9 x 5 inch loaf pans (or you can do muffins, mini-loaves, etc)

-In a large bowl, mix together the pumpkin, applesauce, butter, sugar, eggs, vanilla

-Combine the flour (or rolled oats), baking powder, baking soda, salt, pumpkin pie spice, (and maybe some extra cinnamon if desired); stir into the pumpkin mixture until well blended

-Divide the batter evenly between the prepared pans

-Bake in preheated oven for 45 minutes to 1 hour

-The top of the loaf or muffins should spring back when lightly pressed

-------------------> Curried Pumpkin Soup! DELICIOUS!

4 Macintosh Apples, peeled, cored, chopped

1 tbsp butter

1 spanish onion, finely chopped

1 huge clove of elephant garlic

2 tbsp curry powder

2 tsp ground cumin

4 cups fresh pumpkin

1 handful of baby carrots

3/4 cup chicken broth

1/2 cup brown sugar

4 potatoes, peeled, diced salt and pepper to taste

-Melt butter in large saucepan over medium heat

-Add onion, garlic, cumin; saute, stirring often until onion is soft and fragrant

-Stir in apples, pumpkin, broth, sugar, potatoes

-Bring to a boil, stirring often

-Cover, reduce heat to low

-Simmer 25 minutes, stirring occasionally

-Puree soup in a food processor or a blender

-Return soup to saucepan

-Reheat, covered, over low heat I usually top it off with plain yogurt or sour cream, serve it with warm bread and butter

 ------> Mom's Pumpkin Pie Recipe

1 1/2 cup pumpkin

1/2 cup brown sugar

1/3 cup white sugar

1/2 tsp ginger

1 1/2 tsp cinnamon

1/2 tsp salt

3 eggs

1 cup evaporated milk

1 tsp vanilla

-Combine ingredients, throw into a pie shell (preferable home-made but store bought is ok)

-Bake for 1 hour at 350 degrees

-------> Home-Made Butter Pie Crust Recipe

2 1/2 cups all-purpose flour

1/2 tsp salt

1 cup butter room temperature or slightly chilled

1/4 cup ice water or really cold tap water

-In a large bowl mix the flour and salt

-Cut in butter until mixture resembles coarse crumbs

-Stir in water, a tablespoon at a time, until mixture forms a ball

-(Optional- wrap in plastic & refrigerate for 4 hrs or overnight)

-Roll dough out to fit 2 9 inch pie plates

(I don't even roll it out, I simply split the dough in half, and press them into the pie plates using my palm and thumbs LOL)

-Then you can bake them at 350 for 15 min and then remove from oven if you need to use them for like a refrigerated pudding pie or

-if you are making a pumpkin pie, just pour the pumpkin filling in and then bake them together

Everyone that has tried my homemade butter pie crust has LOVED it. Go for it! LOL
