What I'm Reading: "The Ever-Loving Truth" By Voddie Baucham, Jr.
I checked this out from the church library two weeks ago, and I'm halfway through it! It is a really interesting book because it exposes many of today's false ideas such as "tolerance" and "there is no absolute truth", and truly shows that we are living in a culture that is hostile to Christians and the name of Jesus!

Actually, I'm kind of cheating because I listened to this a few weeks ago, but I thought I'd put it onto here just because it is really a great message. The description on the website says...

The BESTEST Chocolate Chip Cookies EVER that's what!!!!!!! (especially when mom grinds the wheat herself, yum yum!)
We found this recipe awhile ago on allrecipes.com. It is the best chocolate chip cookie recipe because... 1. It's pretty simple for those spur-of-the-moment cookie cravings
2. They don't fall flat and crispy like many cookie recipes (yuck) They are just poufy perfection.
3. Did I mention they're amazingly good????
Ok, So here's the recipe...
Beth's Chocolate Chip Cookies

Servings: 72
Ingredients:
2/3 cup butter flavored shortening
2/3 cup butter, softened
1 cup white sugar
1 cup packed light brown sugar
2 eggs
1 tablespoon vanilla extract
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped pecans (optional)
2 cups semisweet chocolate chips
Directions:

Preheat oven to 375 degrees F (190 degrees C).

In a large bowl, cream together the shortening, butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture. Stir in the pecans and chocolate chips. Use a measuring tablespoon to round dough into balls. Don't roll the balls, just make them rounded. Place onto ungreased baking sheets.

Bake 10 to 12 minutes in the preheated oven, or until centers are set and very lightly browned. Don't overbake. Cool 2 to 3 minutes before removing from baking sheets. Make sure you have lots of ice cold milk!!!
