Jan. 8, 2007 - Fruity Recipes
This post refers back to the post I wrote on Jan. 3 “Baby Steps to Heathier Eating”. Step One was to increase the amount of fresh fruits and vegetables you eat every day. I’m sharing some recipes to go along with Step One. Please share your favorite fruit recipes with me!
FROZEN FRUIT SLUSH
3 medium firm bananas, sliced
½ Cup lemonade concentrate
In a large bowl, stir the bananas and lemonade concentrate until evenly coated.
Now stir in:
6 medium ripe peaches, peeled and cubed (substitute your favorites fruits here. Use strawberries, pears, melons, blueberries, etc… you want about 2 cups)
3 cups water
1 can (20oz.) Crushed pineapple
1 cup sugar
1 1/3 cups. Seedless grapes, halved
1 Cup orange juice concentrate
Cover and freeze for 8 hours or until firm. Remove from freezer 1 to 1 ½ hours before serving to mixture becomes slushy. Don’t thaw completely or you’ll have mushy fruit!
*I like to divide the fruit mixture into 10 plastic cups (or clean, empty yogurt containers) and freeze for individual servings.
This fruit slush is especially refreshing in the summer but good enough to enjoy any time!
AMBROSIA
Families have different ways of making this, here’s how we do it.
5 - 6 oranges, peeled & sectioned. Cut each section in half
½ of a fresh pineapple, cut into 1 inch chunks
1 cup shredded sweetened coconut
Mix well and chill before serving.
I don’t know what it is about this combination of fruit that is so delicious but it’s an easy “fruit salad” and very yummy!
A FEW OTHER IDEAS you may not have tried:
- Frozen grapes (don’t let them thaw completely or they will be mushy)
- Mix frozen fruit pieces with vanilla yogurt and blend for smoothies
- Core an apple and stuff with peanut butter and raisins

I love this blog. We have alot in common. I am using the Daily Bible to read through this year. It is in chronological order and it has 365 daily readings. It also includes devotional insights. I love it.
I also want to eat healthier and make healthier foods and snacks for my family. I want to buy less and less prepackaged, processed foods.
I would love to learn how to work with html and other blog things. I don't have alot of time right now. Maybe, I could ask you if I get stuck.
I'll add this spot to my friends list.

I implemented your other suggestion of a plate of raw veggies and dip as an appetizer last night when dinner was late and everyone was getting restless. My husband actually scolded my son for taking to many carrots, haha, and then later in the meal, my 3 year old daughter started crying (she needed to be in bed!) when dh took the last of the vegetables, "I don't have enough vegetables!" she cried. I thought it was a riot and all the while was comforting everyone that there were plenty more that I could get out. So instead of dessert, 3/4 kids had more raw veggies. (The fourth is still a work in progress!)
Now, I just need to get to the store and buy more!
