Aug. 22, 2007 - Mangoes!
I took my 11 yr old and 2 yr old sons grocery shopping with me on Tuesday. My 11 yr old was soo good with his little brother, pushing him around in the cart and keeping him occupied! Anyway, we saw mangoes were on sale for just $1 each! Whoa, that is cheap for NY! I can't remember the last time I bought a mango. They felt very ripe so we got one and cut it up for a snack today. It was very juicy and delicious! We decided to make a quick fruit salad with it, here's what we did:
1 cold mango - diced in 1 inch pieces
1/2 can of pineapple 1/2 cup of unsweetened,
shredded coconut
Mix all in a bowl and serve! Yummy!
4 of us could have easily eaten ALL of it but we did set a small bowl aside for dad to have with dinner. Now I want to go back and buy 2 or 3 more ... we have an new idea: put a whole, chopped mango in the blender with some vanilla yogurt and a splash of OJ and make smoothies! It's supposed to heat up by Friday so it sounds like a plan to me...

Speaking of going to the grocery. If you want a great laugh, check out my friend's blog ....MOMflippedisWOW. She has a post on there where this lady has some pokemon cards for sell on eBay. Click on the link and read about this mom of 6 going to the grocery store with her kids. Too funny. The smoothie sounds really good, and I love coconut in fruit salads.
