This recipe is quick to make because it uses a box cake mix to begin with.   It's great for a change of pace from your usual snack!

EASY POPPY SEED BREAD

1 yellow or white package cake mix

1   4 oz. package instant lemon pudding

1/2 Cup oil

1 Cup hot water

4 eggs

1/4 cup poppy seeds

Grease and flour (or use pan spray) two 8 x 4 loaf pans.   Preheat oven to 350F.

Place first 5 ingredients in a large mixing bowl and beat for 3 minutes on high speed.  Stir in poppy seeds on low speed, mix well.  Divide batter between your two prepared pans and bake for 30 minutes or until loaves test done with a toothpick.   (its OK if the very center of your loaf still looks moist)

Tip:   I let my loaves bake for 20 minutes and then cover them lightly with a sheet of foil if they are getting too brown.   

We like this even better the second day!   Hope you enjoy it too.
