Mar. 22, 2008-Easter Brunch Casserole
Make this wonderful casserole the night before!
Our Easter Brunch recipe:

1 pound sliced bacon, cut into
1/2 inch pieces
2 cups chopped fully cooked
ham
1 small onion, chopped
10 slices white bread, cubed
1 cup cubed cooked potatoes
3 cups shredded Cheddar

cheese
8 eggs
3 cups milk
1 tablespoon Worcestershire
sauce
1 teaspoon ground mustard
1 dash salt and pepper

| 1. | In a large skillet, cook bacon over medium heat until crisp; add ham and onion. Cook and stir until onion is tender; drain. |
| 2. | In a greased 13-in. x 9-in. x 2-in. baking dish, layer half the bread cubes, potatoes and cheese. Top with all of the bacon mixture. Repeat layers of bread, potatoes and cheese. |
| 3. | In a bowl, beat the eggs; add milk, Worcestershire sauce, mustard, salt and pepper. Pour over all. Cover and chill overnight. |
| 4. | Remove from refrigerator 30 minutes before baking. Bake, uncovered, at 325 degrees F for 65-70 minutes or until a knife inserted near the center comes out clean. |

Nov. 8, 2007-A Cup of Ginger Tea
Since cold and flu season is now upon us, this is a great time to start drinking ginger tea. Ginger tea tastes completely different from herbal tea. I do not drink herbal tea at all. (I wish I could and have tried to force myself but can't get it down. ) You have probably heard about ginger being great for nausea but it is also beneficial in other ways! It is used to ward off colds, sore throat and the flu plus it warms you from the inside out!
A web-site called www.healthandyoga.com (I'm not really endorsing this site) has this to say:
Ginger has been revered in Indian and Chinese civilizations for over 5000 years for its powerful health imparting properties. In fact, Indian ginger is said to have the most potent medicinal properties.
Due to such a prolonged belief, research on ginger benefits was natural. Sure enough, the results were on expected lines:

Danish researchers found that ginger can block the effects of prostaglandin - a substance that cause inflammation of the blood vessels in the brain and can lead to migraines. |

Have I convinced you to try a cup? Here's how I make it at home:
1. Buy yourself a piece of fresh ginger root. Store it in the fridge until your ready to use it.

2. Cut off about a one inch piece that is also roughly one inch thick. (You don't have to be exact!) Peel and slice it.

To your left is a bit of ginger root left over that we have been cutting from. In the middle is sliced ginger root and at your right is the peelings off the root. (toss those out)
3. Toss your ginger root slices into 2 cups of water and bring to a gentle boil.

At this point, I take it off the heat and cover it. Let it steep about 10 minutes. It can go longer if you like it stronger (it will be "spicier"). Some directions will say to boil it for the full 10 minutes so I guess you can do what you prefer.
4. When its ready, pour it through a strainer and enjoy! I don't add any sweetner but honey would be a good choice if you need some. You will notice the water is a very pale yellow.

We started drinking our tea before I stopped to snap a picture! I've been drinking it in the afternoon (as a healthy alternative to coffee) now that the weather is chilly.
I hope you'll try it and let me know what you think. It really is good for colds --even my kids will drink a weak cup when they are sick.

Oct. 7, 2007-Poppy Seed Bread Recipe
This recipe is quick to make because it uses a box cake mix to begin with. It's great for a change of pace from your usual snack!
EASY POPPY SEED BREAD
1 yellow or white package cake mix
1 4 oz. package instant lemon pudding
1/2 Cup oil
1 Cup hot water
4 eggs
1/4 cup poppy seeds
Grease and flour (or use pan spray) two 8 x 4 loaf pans. Preheat oven to 350F.
Place first 5 ingredients in a large mixing bowl and beat for 3 minutes on high speed. Stir in poppy seeds on low speed, mix well. Divide batter between your two prepared pans and bake for 30 minutes or until loaves test done with a toothpick. (its OK if the very center of your loaf still looks moist)
Tip: I let my loaves bake for 20 minutes and then cover them lightly with a sheet of foil if they are getting too brown.
We like this even better the second day! Hope you enjoy it too.

Aug. 22, 2007-Mangoes!
I took my 11 yr old and 2 yr old sons grocery shopping with me on Tuesday. My 11 yr old was soo good with his little brother, pushing him around in the cart and keeping him occupied! Anyway, we saw mangoes were on sale for just $1 each! Whoa, that is cheap for NY! I can't remember the last time I bought a mango. They felt very ripe so we got one and cut it up for a snack today. It was very juicy and delicious! We decided to make a quick fruit salad with it, here's what we did:
1 cold mango - diced in 1 inch pieces
1/2 can of pineapple 1/2 cup of unsweetened,
shredded coconut
Mix all in a bowl and serve! Yummy!
4 of us could have easily eaten ALL of it but we did set a small bowl aside for dad to have with dinner. Now I want to go back and buy 2 or 3 more ... we have an new idea: put a whole, chopped mango in the blender with some vanilla yogurt and a splash of OJ and make smoothies! It's supposed to heat up by Friday so it sounds like a plan to me...

Feb. 6, 2007-Grape Gelatin Jigglers (Dye Free)
I'm working to rid my kitchen of foods prepared with artificial coloring/dyes. (i.e. yellow #5 or #6, blue #5 and red #40, etc..) I recently blogged about it here. Below is a recipe that's fun for the kids (like JELLO) but with no dye!
GRAPE JIGGLERS
1 (12 oz.) can frozen grape juice concentrate, thawed
3 envelopes unflavored gelatin (like Knox)
1 1/2 cups (1 can) water
Soften gelatin in grape juice. Boil the water and add the juice/gelatin mixture. Stir until the gelatin dissolves. Remove from heat and pour into a lightly greased 9 x 13 pan. Chill. Cut into squares when firm. Refrigerate leftovers.

Jan. 8, 2007-Fruity Recipes
This post refers back to the post I wrote on Jan. 3 “Baby Steps to Heathier Eating”. Step One was to increase the amount of fresh fruits and vegetables you eat every day. I’m sharing some recipes to go along with Step One. Please share your favorite fruit recipes with me!
FROZEN FRUIT SLUSH
3 medium firm bananas, sliced
½ Cup lemonade concentrate
In a large bowl, stir the bananas and lemonade concentrate until evenly coated.
Now stir in:
6 medium ripe peaches, peeled and cubed (substitute your favorites fruits here. Use strawberries, pears, melons, blueberries, etc… you want about 2 cups)
3 cups water
1 can (20oz.) Crushed pineapple
1 cup sugar
1 1/3 cups. Seedless grapes, halved
1 Cup orange juice concentrate
Cover and freeze for 8 hours or until firm. Remove from freezer 1 to 1 ½ hours before serving to mixture becomes slushy. Don’t thaw completely or you’ll have mushy fruit!
*I like to divide the fruit mixture into 10 plastic cups (or clean, empty yogurt containers) and freeze for individual servings.
This fruit slush is especially refreshing in the summer but good enough to enjoy any time!
AMBROSIA
Families have different ways of making this, here’s how we do it.
5 - 6 oranges, peeled & sectioned. Cut each section in half
½ of a fresh pineapple, cut into 1 inch chunks
1 cup shredded sweetened coconut
Mix well and chill before serving.
I don’t know what it is about this combination of fruit that is so delicious but it’s an easy “fruit salad” and very yummy!
A FEW OTHER IDEAS you may not have tried:
- Frozen grapes (don’t let them thaw completely or they will be mushy)
- Mix frozen fruit pieces with vanilla yogurt and blend for smoothies
- Core an apple and stuff with peanut butter and raisins
